Cookie cutter eggs




Woke up one weekday morning and began to browse on Facebook (Facebook first thing in the morning? Hello my name is Tay and i'm an addict). I follow a page called interesting and creative designs. They posted some food art, where someone made ring molds from green and red bell peppers which they cooked sunny side eggs inside. GENIUS!!! Breakfast was served.

I decided to try it out with a few changes. Aside from the fact that the thought of eating a runny egg makes me nauseous, I added onions, cream cheese and bacon inside this majestic mold.  It was pretty much an omelet, only the flavor of green peppers is much more prevalent. If you don’t like sweet peppers you probably would not enjoy this one. But I loved it, something I’m sure kids would be excited to make and eat in the mornings.




Ingredients (printable recipe)

2 large green peppers
3 eggs
2 slices Canadian bacon
1 tbsp. olive oil
Salt and Black pepper to taste
2 tbsp. chopped Onion
2 tbsp. chopped tomato 
1 wedge garlic and herb cream cheese


Instructions

1. To prep, chop up onions, tomatoes, and bacon (into bits) Slice the green peppers  into large rings about half inch thick. One Green pepper can yield three rings.
2. In a small sauce pan with one teaspoon of oil, or a few sprays of cooking oil, saute bacon until they are crisp. Then add onions and tomatoes and cook till soft. Cut the cream cheese into small cubes.
 3. Grease a large skillet with the remaining oil on low heat. When the oil is hot add the peppers and fill each ring, with the saute mixture and some cheese cubes.
4. Last step crack eggs into each mold, add salt and pepper. the larger rings will be able to hold a whole egg. But smaller rings can hold egg whites. Or you could beat the eggs and pour the same mixture in each. Your choice. The eggs when cooked act as a binder and hold all the filling in place. After about a minute, or whenever you feel the bottom is cooked, flip them with a spatula and allow the other side to cook. You have to do this on low/med heat or else you’re going to burn the sides without the center being cooked.

Also, your egg whites are going to run under the sides of the pepper, but most of it will stay in the mold. I cook and eat those strays anyway. Have you had breakfast yet?
