Vegetable Lasagna

When we have family dinners we have to ensure that there are at least three items on the table that are vegetarian friendly so my mother can feel that she has had a good meal just like us swine and cow killers. Being a Jamaican Vegetarian, not living in Kingston, leaves your palette very underwhelmed as most restaurants believe that chick peas, ackee and steamed vegetables are all it takes to satisfy vegetarian foodies. This is close to the top of my favorite recipe of this month one that will be on our family table for years to come.

Broccoli and cheese Pull apart bread....my 100th post

Pull apart bread is my most recent obsession. A few weeks ago I stumbled upon a great blog called Tickling palates where I found amazing looking garlic and smoked tomato pull apart bread. I was totally inspired so much so that since then I have made three pull apart breads. The first one was a garlic and cheese bread, the second was a cinnamon raisin with orange glaze and now finally this beauty.

Potato Asparagus alfredo pizza

I hope everyone had a great Easter weekend. We had quite a relaxing time in Ocho Rios at a friend’s guest house.  The place had the most spectacular views, was so breathtaking. Went to the blue hole, dipped in the ocean, had breakfast by the pool with lovely sea views and finally took in the last few hours of racing at Dover raceway.  Now after all that fun its back to reality and another blog post. And yes my friends, it’s another pizza.

Veggie fruit pops

This is my Spring time three for one special, because you are getting three recipes in this one post. I wanted to make something easy and healthy. So what better way to get your daily dose of vitamins and minerals by sucking on some yummy pops. Now you guys know, I show you what works and what does not, I don’t hide things. Two of these pops were truly a WIN however one was an epic FAIL. Well not a total fail, but I’ll tell you more as you read further.

Pumpkin Cabbage Dumplings

Believe it or not, my lazy self was going to make a salad for this post. Yes a SALAD. Lettuce, tomatoes, cabbage, carrots some raisins and a home-made dressing. After careful consideration, I felt that I would be cheating you guys out of a recipe if I had indeed done this. So with no preparation at all I went into the kitchen with no idea what I would be making for this post. What I saw on the counter was a very large pumpkin my Grand Uncle had given to us. Hence this dumpling was born.

Spinach Mushroom Pizza

Who doesn’t love a great pizza, especially a great healthy pizza. Homemade pizzas are always the best, I love being able to control the ingredients; the perfect amount of sauce cheese and toppings all to my liking. I was told by a friend that he cant eat it because its too healthy for him. I took that as a good sign. This recipe is semi-homemade, as I enlisted the help of Pillsbury and Belcour to make the process even easier.

Crispy fried okra

I never really considered making Crispy fried okra before.  Last week my Grand Uncle gave us some okra from his garden. They were very large beautiful okra’s, however they sat in our refrigerator for a few days because no one likes okra. We tolerate it in steamed fish, but even then we hardly ever include it because of the slime. My mother began dropping little hints about fried okra. I was hesitant to try this recipe but in truth, I needed an extra recipe for this month. When she began to really pressure into making it and then even threatening to make it herself, I easily caved.  It’s quite yummy, still a little slimy but not bad at all and this is coming from a person who hates okra.

Meatless Stew peas

Have you ever been to your favorite Jamaican lunch spot to order a stew peas lunch and heard “di meat finish” But you order it anyway because the stew peas is so good? A meatless Jamaican stew pea’s, with no pig tails is such a travesty. However as much as we love our meat recipes, they have to be revamped to accommodate the palates of the “non-meater’s” in our lives. There is really not much to say about this one. I won’t sit here and pretend that this version is better than one filled with pig tails, oxtails and beef. However it does pack a huge amount of flavor considering its lacking in the salted meat department.
