Cheese stuffed spaghetti and meatballs

A few weeks ago I was browsing Instagram as usual and found a video of some delicious mozzarella stuffed meatballs.  I don’t think I waited three days before I made a huge batch of sauce and got to making stuffed spaghetti and meatballs for dinner.

Pumpkin Pork Lasagna

And the nominees for most comforting food are (drum roll please) mac n cheese, fried chicken, soft baked chocolate chip cookies and none other but lasagna. Who would win that battle? I can say that if this pumpkin pork lasagna was in the running it would be a tight race. It’s loaded with flavor and cheesy, meaty goodness.

Baked Penne a la Vodka


I love Pasta


The first time I had penne a la vodka was about 7 years ago at my Friend Petras wedding. It was an intimate wedding, after the ceremony we all went to Crab Shanty in city island NY for dinner. She encouraged me to get the penne a la vodka with shrimp raving about how delicious it was; she was so right. It was super creamy with really rich flavors and juicy shrimp. Since I have already made two shrimp pasta dishes this month I decided to make this one meatless. In addition, I decided to bake it, it’s the one thing I have never seen done so I did it.

Mushroom marinara sauce


I love Pasta


It never fails to amaze me how easy, quick and delicious a homemade marinara sauce is. This one is bursting with all the flavor full fresh and dried herbs. Since this month is all about pasta one should absolutely know how to make a red sauce to accompany it. This one is made extra special with my favorite fungus the mushroom.

Vegetable Lasagna



M...eat..less



When we have family dinners we have to ensure that there are at least three items on the table that are vegetarian friendly so my mother can feel that she has had a good meal just like us swine and cow killers. Being a Jamaican Vegetarian, not living in Kingston, leaves your palette very underwhelmed as most restaurants believe that chick peas, ackee and steamed vegetables are all it takes to satisfy vegetarian foodies. This is close to the top of my favorite recipe of this month one that will be on our family table for years to come.
