How amazing are the flavors of sweet and sour, another
lovely marriage. This easy sweet and sour sauce is my specialty. I can’t tell
you how many times I have made sweet n sour meat balls. For those of you who
follow me on instagram, you would remember about two weeks ago, I posted an
image of some sweet and sour chicken. This is that very same sauce. It can top
any meat. I knew it had to make an
appearance this month as an appetizer, especially atop these meatballs in cucumber
cups. The perfect two to three bites.
Back in the day I used pineapple juice as the base for my
sweet and sour sauce. But I realized the pineapple jam works so much better,
and it negates the need to add too much extra sugar. The pineapple juice takes a
long time to thicken up and even when it did when tossed with breaded and fried
chicken breast the meat would eventually get soggy. With the jam the fried meat
remains crispy. This recipe looks complicated but it’s super easy, the hardest
part about this recipe is chopping the sweet peppers into little even cubes.
Makes 15-17 meatballs
Ingredients (printable recipe)
Beef
1 lb ground Beef
1 tbsp soy sauce
1/8 tsp. black pepper
½ tsp. Onion powder
½ tsp. paprika
½ tsp. Garlic powder
1egg
¼ cup bread crumbs
Sauce
¼ cup Red bell pepper
¼ cup Yellow bell pepper
¼ cup Green bell pepper
¼ cup onion
¼ cup Ketchup
1 whole Lime (juice)
2/3 cup Pineapple jam
½ tsp. salt
1 tbsp sugar
I was so tempted to call this a meatball cupcake, because thats exactly
what they look like. The cucumbers offer such a refreshing and crunchy bite paired with the sweet n sour meat. These will definitely wow your friends and family.

- After the sauce is made toss the meatballs in and remove from the heat
- Allow them to sit in the sauce for 5 minutes before serving so the sauce can cling to the meat
- 1 lb of beef makes about 17 meatballs at 1 1.5 inch diameter, but you can make more if you make them smaller
