Breakfast is served
Mothers day is around the corner, and I'm sure your mom would like to have breakfast in bed. This Friday I am here serving up yet another delicious breakfast. In conforming with the stuffed theme of the week (Tuesday I posted salmon filled corn muffins), on the menu today is a waffle stuffed with a yummy sausage apple hash.
Can I tell you how much I am in love with this sausage apple hash? It was purely by accident, its always the culinary mishaps that turn out to be totally delicious. This is a faux hash, it has no potatoes, purely apple and sausage. Its also a mind trick, because the diced apples look just like potatoes, so in your mind you expect a potato, but when you taste it, the warm sweetness surprises you. Its good enough to eat all on its own, the apples are just slightly soft, they maintain a nice bite. I was tasting it so much that there was almost none left to stuff the waffles
I used it to stuff waffles and as a
topping on the waffles. If we can eat chicken and waffles we most
certainly can eat sausage and waffles. I foresee this apple and sausage
hash being used in so many different way. Chicken roulade, or in some
puff pasty, I am just super excited about the prospects.

Sausage apple hash
5 breakfast sausages
1 apple
1/2 cup chopped onions
1/4 cup chopped celery
1 table spoon oil
1/2 teaspoon paprika
1 teaspoon dried sage
1/4 teaspoon black pepper

Greedy tips:
- You can use any waffle batter you choose
- You can stuff the waffle with the hash or you use the hash as a topping
- Be sure not to over fill your waffle iron because it does spread (mine were a bit over filled)
- This waffle recipe is very thick and filling, would be great in a Belgian waffle iron
