Simple Charcuterie cheese board

I DID IT!

The elements of this dish come together like a symphony orchestra. Every item complimenting the next. They are all working together so you taste salt, sweet, zesty, and spicy. Then experience textures like soft, crunchy, and crumbly. I can see why these are all the rage, and how this can make a banging brunch.

Crunchy Cinnamon Toast or Cinnamon toast crunch?

 Belly Full on a Budget

I am wondering why I have not been using dulce de leche to make my French toast all this time. It is so good! This toast was beyond delicious. No cinnamon toast crunch cereal was harmed in the making of this dish. However, it hits all the right notes.

Pistachio Pesto potato salad

M...eat...less

Many are the ways a potato salad can be made. Like seriously, there are just too many options when it comes to potatoes. After all, I did dedicate a month of recipes to these spuds a few years back. And I can still come up with even more ways to use them. This is a very herby and flavorful potato salad. Anyone who loves chives and pistachios will adore this. And its vegan!

Regular degular shmegular Potato salad

Brunch knows best

Who wants potato salad? That’s the line my sister says in a family home video we have. She was walking around with a fork full taunting me as I set the table. It was a Sunday dinner tradition. My mother used to throw down every Sunday. She is the reason my sister is absolutely obsessed with potato salad. So while I am setting the table (by climbing on top of it) my sister would taste the potato salad. No Sunday dinner, potluck, bbq or brunch is complete without it.

Epic spatchcock fried chicken

Brunch knows best

I have reached another level of fried chicken greatness. As you all know, if you have been following me for a while, fried chicken is not my thing. I always make it, and it tastes good, but to me there is always room to grow. Today I went up 5 more levels. This fried chicken was an absolute 8.99 out of 10. And I say 8.99 only because I burnt it.... a bit.

Blueberry Lemonade Mimosa

Brunch knows best

Probably the simplest cocktail ever, and here I am about to over complicate everything in the name of flavor. A mimosa is nothing more than a one to one ratio of orange juice and champagne. To be honest, it can be any citrus juice mixed with the champagne. Another wonderful way to sneak in wine masqued under the guise of vitamin C.

Smoked salmon spread

Brunch knows best

Can it be a brunch without a smoked salmon spread? No I think not.  There are some foods that just scream brunch; mimosas, chicken n waffles and smoked salmon spread or dip, call it what you want. This recipe is incredibly easy to make, and most of all delicious.

Best breakfast pizza ever!

Brunch knows best

Brunch, the most epic combination of breakfast and lunch. And what’s more fitting for brunch, than a pizza with bacon and eggs? I adore breakfast and it goes without saying that brunch is up there on my list. Lately, I have been on a pizza high, I don’t know why, but I have just been making all kinds of pizzas. After the success of the last pizza I decided that the blog is most definitely in need of a breakfast pizza.

Easy pineapple lime Jam

Brunch knows best

Jams are so amazingly versatile, you might think they are only meant for crackers and bread. But they can really add a delicious element to so many dishes. I’ve put jam on a pizza (which I’ll post a recipe of later) I’ve used jams in BBQ sauces and its my go to ingredient for sweet and sour sauce. All around its something I use often, so it makes sense that I would have a scratch made pineapple jam recipe.

Red wine iced mocha

"Feast of Saint Valentine"

Sometimes you just want a glass of red wine in the morning without the judgmental gasps. If that’s you then what better way than to camouflage that glass with some mocha. In all honesty there is more milk than red wine in this, but the flavors of the wine do stand out.  Its cold, and has the perfect balance of bitter, sweet and tart. They always say its 5-o clock somewhere.

Breakfast meatloaf sliders

"Beefy"

How often do we eat beef for breakfast? Depending on where you live that may be a whole lot, but in my family, not very often. We do pork sausages, bacon and chicken. The only time we will do beef for breakfast is when we are having dinner left overs. I wanted to do a recipe that was not a typical beefy dinner recipe. This is basically a beef breakfast sausage seasoned as if it were a meatloaf. Paired with all the yummy things you would expect to see on a breakfast platter.

Stew Pork Hock

"JAMAICAN FLAVORS"

When stew beef turns into stew pork hock. That’s how this recipe came to be. I headed to the grocery store to get some beef to make a beef stew. When I got to the grocery store they had barely two packs of beef for stewing and they were not looking good at all. Right next to the beef a guy from the back just put out a whole heap of fresh pork. I went over to the  pork area and began looking at pork chops. Then I saw that pork hocks were half the price of pork chops, I was absolutely shocked. Who knew pork hock was a thing?

Pumpkin apple sausage fritters

Pumpkin Everythang!

Jamaican fritters are probably one of the easiest things you can whip up for breakfast that will make everyone happy. They are so versatile, you can basically add anything to them and they will turn out delicious. We generally make sausage, bacon, salt fish or banana fritters. Since its pumpkin month I decided to make some pumpkin fritters.

Crispy Peanut butter and jelly stuffed French toast

'Sammies'

It’s everyone’s childhood sandwich. Pb&j  is a staple in almost everyone’s homes. If your refrigerator is empty chances are beside those takeout box is a jar of peanut butter. I am the girl that eats it with a spoon as a quick snack. I adore peanut butter and jelly to the core, especially with my favorite guava jelly. So there was no way it would not make an appearance this month. But as you know I have to do something special with everything I make.

Candied bacon egg and cheese sandwich

'Sammies'

The classic bacon egg and cheese, it’s that one sandwich that you almost can’t go wrong with. Bacon is perfect, eggs are divine and cheese even more so. Then the breads that they can grace are seemingly endless, croissants, bagels, white, wheat, rye, sourdough, coco bread, rolls, muffins, even doughnuts and cinnamon buns. Yes I have seen bacon egg and cheese sandwiched between two glazes cinnamon buns. Today’s post is not that extreme, but it most definitely is putting on a brand new pair of shoes on an old favorite.

Parsley soufflé omelette

The best way to eat an egg!

In researching omelette types I discovered the soufflé omelette. An interesting method where the whites are whipped separately from the yolks then combined to make a fluffier fuller omelette. I decided to use a few herbs, some flavored cheese and put the method to the test. It really does work.

Spinach & turmeric omelette with caramelized onions

The best way to eat an egg!

Today you can call me Sam-I-am, because I am encouraging everyone to try these green eggs. Dr. Seuss may be disappointed that I left off the ham but the yummy caramelized onions and turmeric will make everyone happy.

Pepperoni Pizza Omelette

The best way to eat an egg!

Pizza for breakfast is almost as common as having an omelette. Today we combine the two, a delicious peperoni pizza omelette filled with mozzarella cheese. Serve this with some toast and you will truly feel as though you’re eating a slice from your favorite pizza shop.

Broccoli Omelette

The best way to eat an egg!

It’s always a good thing when you can include veggies in breakfast without drinking it. Hello my name is Greedy and I HATE smoothies, shakes or any form of meal replacement drinks as breakfast.  It’s only fair that after fasting all night I be allowed to chew the next morning. And If I must chew on something it might as well be this ‘bombtastic’ omelette!

Pumpkin Omelet

“Pumpkin Everythang”

Well hello my greedy guys and gals, welcome to the second annual greedy girl pumpkin month. If you were here with me last year you will now realize that every October I will dedicate the recipes to this one round orange gourde.  Last year I made 9 pumpkin recipes everything from soups to panna cotta.  If you’re like me, you will agree that breakfast is the best meal of the day. This recipe is my attempt to combine my favorite breakfast dish with a not so conventional ingredient. Let’s face it, when was the last time you ever had a pumpkin omelet?
