Lemon Mint Fruit cocktail

Summa Summa Summa time!

What summer BBQ would be complete without a fruit salad or a fruit cocktail? On this, another Friday I bring to you a jazzed up fruit salad you won’t make any other any after you have tried this. Its minty, sour, sweet so refreshing and perfect for summer in every way.

For my fruit cocktail I went with melons since they hold a lot of water and are not too sugary. I find melons to be one of the most refreshing fruits, not too sweet and hold a lot of water. Hence I decided to do a melon salad with the only addition of grapes for added flavor dimension. The grapes are a lovely sweet/sour bits amidst the array of melons.

One thing I must say, peeling the grapes is not negotiable. You have to peel the grapes or the simple syrup will just sit on the skin and not really soak into its fibers. Peeling the grapes is extremely tedious and annoying but worth it in every bite.

If you’re Jamaican you may realize that I used the Jamaican mint to make the syrup. While the flavor it imparts on the syrup is phenomenal, the mint is not really edible (covers face). It would be best to use the softer American mint (the opens used in mojitos) It’s softer and more palatable.

Ingredients (printable ingredient list)

1 teaspoon lemon zest
2 tablespoon white sugar
½ cup water
squeeze of  ½ lemon
1 teaspoon Mint leaves
1 ½ cup Grapes
1 cup Melon
1 cup cantaloupe

Greedy tip:
  • Try slightly freezing them for an extra cold refreshing burst. Not rock solid but to the point where they are just becoming frozen.
