Pork Feta burger with Asian slaw


Burger Showdown! 

And now for the protein my sister eats no longer. No way we could have a burger month and not include the other white meat. Juicy pork patty spiced with feta cheese, served with a crunchy Asian slaw and even more pork in the form of crispy bacon strips.

This burger is so delicious. It almost tastes like a jerk pork patty I’m sure that’s due to the fact that it’s fire grilled. The feta adds the right amount of cheesy saltiness and you can never go wrong with onions. At first I had no intention of adding scallions to the pork patty. Buts seeing as the slaw was Asian spiced I figured for continuity I would add them to the mix and it really added a lovely flavor to the pork.  

Don’t be afraid to grind your own meat at home if you must. I have the kitchen aid grinder attachment but I will tell you, using it was an absolute nightmare. I find that it is in no way powerful enough to properly grind meat. So I highly recommend the good old food processor to grind meats. All of the burgers filmed this month with the exception of the beef I ground myself.

 I’m not saying it was easy. This pork specifically was a task. Why? Because it’s best to grind meat when slightly frozen, however cutting through a frozen pork butt, no matter how sharp your knife is ain’t easy (shout out to wusthof). But once you get your meat cut into evenly sized cubes pulse them in the food processor until they are finely ground. I pulse until it almost resembles the store bought ground pork. You don’t want it to be a paste, some of the pieces might be pasty but generally you want small ground pieces. You best option and what I would do next time, get the pork butt, but then ask the butcher to grind it for you with their industrial grinders, so you get a fresh ground product rather than one that’s been on the shelf.

Makes 6 burgers

For the patty
1 ½  lb Copperwood pork shoulder/butt ground
¼  cup Feta cheese
¼  cup chopped scallion
2 Garlic cloves
1 small Onions
Black pepper
allspice
For the Asian slaw
1 Carrot
½ small Cabbage
½ small Red cabbage
¾ cup mayonnaise
½ small Onion shredded
1 clove Garlic shredded
1 teaspoon Ginger shredded
1 tablespoon Honey
1 teaspoon Sesame oil
1 teaspoon sesame seeds
Toppings
Caribbean passion Bacon
Toasted bun





Greedy tips:
  • If you don’t like to chew onions in your burger patty just blend or shred them instead of chopping them. It adds the same flavor but you can’t see it.
