The much-requested recipe from my Instagram stories; I am always making this easy dinner, and everyone is always asking for the recipe. Without further adieu, I bring to you an unbelievably delicious chicken and potato dinner. The gag is… you think the chicken will be the star of the show, but the potatoes shoot in from second place for a photo finish. Turns out they end up being the best potatoes you ever ate.

They always say when life gives you lemons make lemonade, but the saying assumes you have sugar and water. I have been MIA for what feels like the last 20 years from blogging. Life gave me a whole bag of lemons when my husband died four days after my last post, while I was 7 months pregnant. I was fresh out of sugar and water. Thank God for friends and family, who not only gave me sugar and water but made the lemonade for me and fed it to me. Fast forward four months later, Baby is born and healthy, I’m back to cooking and finally back to blogging. I have lost my biggest fan, but I’m still here by God’s grace. Next ill start back on video posts. Normally April would have been my month for vegan and vegetarian recipes, but I’m mixing it up and just finishing off the month with maybe 5 seafood recipes. The first being a super easy and very flavorful shrimp dish.

Jamaican Brown Stew Fish

Another Jamaican favorite is brown stew fish, a close cousin to steamed fish and my father’s favorite way to have a fresh snapper. With stew fish you get the best of both worlds, it basically combines fried fish and steamed fish into one lovely pot.

Grilled chicken alfredo tonight?




I am a firm believer in taking lunch to work from left overs. Sunday cooking is the best because you get at least two days of packed lunch. I'm such a left over lover, I will cook during the week after work, just so I have a packed lunch for the morning.
