I can't believe after all these years I never had a plain and straight curry shrimp recipe on the blog. Someone messaged me on Instagram asking for a curry shrimp recipe and I actually went to the blog looking for one and was shocked to realize, it's not there! So I made sure to change all that.

This is a sure winner; it is one of those recipes that is easy to whip up after work for a fast but flavorful dinner. Shrimp, and fish seasoned in a lovely marinade bursting with Jamaican flavors and then grilled. I made this for Sunday dinner two weeks ago and not a soul went to bed hungry.

They always say when life gives you lemons make lemonade, but the saying assumes you have sugar and water. I have been MIA for what feels like the last 20 years from blogging. Life gave me a whole bag of lemons when my husband died four days after my last post, while I was 7 months pregnant. I was fresh out of sugar and water. Thank God for friends and family, who not only gave me sugar and water but made the lemonade for me and fed it to me. Fast forward four months later, Baby is born and healthy, I’m back to cooking and finally back to blogging. I have lost my biggest fan, but I’m still here by God’s grace. Next ill start back on video posts. Normally April would have been my month for vegan and vegetarian recipes, but I’m mixing it up and just finishing off the month with maybe 5 seafood recipes. The first being a super easy and very flavorful shrimp dish.

Its November, another month of recipes for your holiday table. In Jamaica we don’t celebrate Thanksgiving, we throw down for Christmas dinner. However, these recipes will work perfectly for your Thanksgiving dinner as well, if you want a departure from the green bean casserole and cranberry sauce. This month, I will be sharing recipes for two side dishes, a main dish with chicken, a seafood dish and a simple dessert. So we start things off with a rather untraditional pasta side dish that can replace mac n cheese without anyone noticing.

Coconut Shrimp

This is my sisters favorite dish. Actually, let me take that back, this was my sisters favorite dish before she suddenly developed an allergic reaction to shrimp in her 20’s. After years of sampling coconut shrimp from every single restaurant we have ever been to that sells it, her heart sinks because she can no longer eat it. She was indeed the coconut shrimp queen. This post is in dedication to her former self, I pray she does not suddenly develop allergies to lobster, because then she would really be devastated.

Shrimp jibarito

A few years ago my sister and I were both interns in Manhattan at different city departments. She was with NYC media, and me with the department of city planning.  It was amazing that our offices were within walking distance from each other because that meant daily lunch dates. We had Italian, so much Cuban, food trucks, Chinese, you name it we had it. After a while we realized that this daily lunch thing was wreaking havoc on our pockets so we decided to carry lunch and have it in the park. Before we opted out of the lunch restaurant hopping scene, We had our first Jibarito at a Puerto Rican restaurant named Sazon.

When cilantro, grilled fish and mango show up to the party you know it’s going to be wild. This is by far one of, if not the best salads I have ever had. Flavors are bursting all over, sweet, salty, spicy, Smokey and everything else in between. A very light and delicious summer salad you will probably want to try.

This one like all the others is a very simple and easy dish to prepare for anyone who loves shrimp. In my book shrimp, pasta and garlic are a match made in culinary heaven and any recipe that utilizes the trio has to be divine.  This dish is super decadent and rich, definitely not fat free.

Shrimp toast



Time for Takeout!


Flavorful shrimp paste slathered on bread and fried to a toasty crisp. That’s all this is, pretty much shrimp croutons if you ask me. Very delicious, the onions, ginger, scallions and garlic add so much flavor to the shrimp. I love the texture difference where the bread is super crunchy with the other side being creamy with a light crisp. Who new home made shrimp toast could be so good.

Generally November is my favorite blog month. I really enjoy cooking all the Christmas recipes. However this burger month has come really close to being one of the best. I truly enjoyed experimenting and creating all the flavor combinations of all the burgers past. This shrimp patty however is my absolute favorite of the month. I feel like I say that about every last post. But I swear to you, you don’t need any bread, you don’t need any cucumber slaw all you need in life is a plate full of these shrimp patties.

This is my boyfriend’s absolute favorite way to eat shrimp. I can’t tell you how many times I have had to make this for him. I decided it was high time I post this recipe to the blog. It’s super crunchy and flavorful. The tartar sauce is so very easy to prepare and uses ingredients you probably already have in your refrigerator.

A few weeks ago I was on facebook and I saw a friend post a pineapple in a plastic bag with some green ‘stuff’ on it, the tag read pineapple chow. I was like what’s that? A little bit of research led me to several Trinidadian sites detailing how to make the soaked or marinated pineapple. I thought it very interesting that they soak fruits in a marinade of garlic, pepper, salt and chadon beni. The next thought that crossed my mind was how awesome this would be with grilled shrimp….and that’s what I did.

Shrimp scampi is one of my favorites, it’s no secret. Ever since I saw Tyler Florence make it on Food network and realized it was so easy to make I was hooked. I have made it countless times over the last seven years. It’s the first video recipe I ever posted and the most popular recipe on my youtube channel with over 18,000 views. Most recently I began making it onto a one pot meal by adding cream and pasta. So I figured I would share the recipe with you all.

This recipe has been in our family since 2007. There was a time where we were making this every Sunday. My cousin in NY looks forward to this dish every thanksgiving, it’s his favorite and for good reason. Who would not love a bowl of your favorite seafood simmered in a creamy curry coconut sauce? And it’s all thanks to a lunch my mother had at the Four Season’s hotel.
