Cheeseburger Dumplings

I have wanted to make cheeseburger dumplings for so long. Some of you already know I have a fierce love for all thing's Asian food. Generally, when I make dumplings, they are always filled with veggies or pork, never beef. I saw someone make cheeseburger dumplings about two years ago on Instagram, and I was so intrigued. So, this was a welcome change from the usual. The ultimate east meets west. It literally tastes like a little mini cheeseburger.

Ackee and saltfish with fried dumplings

There is no way I could have done a month of breakfast recipes and not ventured into ackee and salt fish territory; After all its Jamaica’s national dish and for good reason. In our household it is prepared for breakfast once a week, either Friday or Saturday mornings. I have a cousin who is so in love with ackee she could eat it every day. However I feel like ackee and fried dumpling is a special breakfast, and having it every week makes it not as special. So in an attempt to not take this meal for granted, most times when it is prepared I don’t eat it, I have an omelet instead and wait about three weeks so when I do have it, its extra delicious.

Pumpkin Cabbage Dumplings



M..eat..less

Believe it or not, my lazy self was going to make a salad for this post. Yes a SALAD. Lettuce, tomatoes, cabbage, carrots some raisins and a home-made dressing. After careful consideration, I felt that I would be cheating you guys out of a recipe if I had indeed done this. So with no preparation at all I went into the kitchen with no idea what I would be making for this post. What I saw on the counter was a very large pumpkin my Grand Uncle had given to us. Hence this dumpling was born.
