End of Independence Month!
Its fish taco time
And not just any fish taco, but Jamaican escovitch fish
tacos. This recipe is really simple and easy, and if your use to cooking Jamaican escovitch fish and
festival your well on your way to a great lunch.
Do you remember that pineapple pickle I made earlier this month to kick off Independence month? Well it’s been curing all this time, all the vinegar and pepper have permeated through the pineapples, carrots and onions and its making an appearance in these tacos today.

The taco shell is actually festival just pressed out and
fried flat. You can use my simple festival mix, or you can use the store bought
mixes
1 lb Fish
½ tsp Salt (season fish)
½ tsp Black pepper (season fish)
1 tbls Oil (season fish)
1 cup flour
1 tsp smoked paprika
1 tsp all purpose seasonings
1 tsp back pepper
Festival
2 cup flour
1 cup cornmeal
3 tbls sugar
1 tsp salt
2 tsp baking powder
1 cup water
Garlic Honey
2 cloves garlic
1 tbls honey
1/2 tsp smoked paprika
Let get started
1. First let’s make the dough for the festival. This needs to
rest for 30 minutes covered
2. Then season fish with salt black pepper and oil. You can
remove the skin if you want, but since this is deep fried the skin will be
crispy so it’s fine to leave on
3 Turn on your deep fryer and set the temp to about 340
degrees, make a seasoned flour mix for the fish and dredge them in it
4 Once the oil Is hot add your fish and deep fry til they are
golden brown
5 After the dough has rested, split into four pieces and flatten
with your finger. In a sauce pan with a few table spoons of oil, place one
down, fry the side flip and cover to cook the other side
7 Next we sauce the fish with the pickle liquid and then, time to assemble your taco, by slicing the festival, adding
fish, honey and pickled veggies to the center, now enjoy!!
