Savory Bread Pudding

Recipes have a funny way of transforming themselves. I had every intention of making some savory bread pudding waffles with a pepper jelly glaze ( which was really some store bought pepper jelly melted in the microwave…soooo good) I went to my mother’s house because I did not take the waffle sandwich maker when I moved. We turned that kitchen upside down and we have yet to find the waffle iron inserts. Needless to say, I was highly annoyed. Because bread pudding really need to cook thoroughly, I didn’t think the sandwich press inserts could do the job as well as the waffle inserts. However because I had no other choice but to make it work, I tried cooking this recipe three ways.

Banana bread pudding with cinnamon streusel

It’s the final recipe for May. No this is not bread pudding made from banana bread (that's coming soon) this is bread pudding with the addition of bananas. Yes, believe it or not, I’m adding another bread pudding recipe to the blog. I think this is like the fourth one. There is the hazelnut bread pudding, the breakfast bread pudding with pears, and the cheesy chocolate brioche bread pudding. Who knew bread pudding was so versatile?

The one thing I look forward to when I come to NY is my visit to whole foods.  And not just for the experience, for the French brioche bread. The French bread by Euro Classic is the most delicious brioche bread I have ever eaten in my life; has me wanting to book a flight to France. I could literally eat the entire bag. With that said I can’t lie to you, it really pained my soul to use the bread to make a bread pudding. Hence today I bring you a very small bread pudding for two.

When you have stale bread, there is no better way to use them up than to make a bread pudding. And this recipe is truly the best bread pudding recipe ever.  It is extremely flavorful, rich in hazelnut flavors and a hint of Jamaican chocolate.  You may end up purchasing bread just to make it.

Breakfast Bread Pudding…a.k.a Chocolate bread pudding with pears and sea salt

Bread, Chocolate, coffee, pears and eggs, sounds like breakfast right? I thought so too, hence the name of this dish. Bread pudding has got to be one of the top 5 recipes utilizing stale bread.  Not to say bread has to be stale for one to make the dish. However in our household bread pudding gets made when there are 4 or 5 different bags of almost finished breads waiting to be tossed out. A few slices of wheat bread, some hamburger buns, dinner rolls, one or two raisin rolls, maybe some hard dough bread back (what we call the end pieces of bread in Jamaica); we gather all these sandwich rejects and make them into something special.
