Cilantro Grilled Chicken Sandwich


If perfection had a flavor...

It's the herb you either love or hate, the great cilantro. This recipe is very long overdue. I finally had a bunch of cilantro in my fridge. I managed to use it for this recipe before it all went bad. I have mentioned on this blog about the best-grilled chicken sandwich ever that I had on Prince street in New York. It was our spot after we did our nails at Marie Nails. I finally recreated it, and it is epic. If you don't like cilantro, I'm shocked that you are still reading, no need to continue.

A merger of American and Mexican flavors. This is one of the most flavorful baked macaroni and cheese dishes I probably have ever made. It’s salsa, mac n cheese, queso, chicken and everything in-between all baked into one delicious bite. Cilantro and cheese are a match made in heaven. And this baked macaroni and cheese is heavenly.

Cilantro Roasted Chicken

I am a huge fan of cilantro, if you are not a cilantro fan, steer clear of this recipe. It has cilantro in the marinade, under the skin, in the sauce and garnished on top. It’s full of herb goodness and I love it! One of the best roasted chickens I have made in a while, easy and quick no muss no fuss.

Grilled shrimp on pineapple chow


Something Smells Fishy...


A few weeks ago I was on facebook and I saw a friend post a pineapple in a plastic bag with some green ‘stuff’ on it, the tag read pineapple chow. I was like what’s that? A little bit of research led me to several Trinidadian sites detailing how to make the soaked or marinated pineapple. I thought it very interesting that they soak fruits in a marinade of garlic, pepper, salt and chadon beni. The next thought that crossed my mind was how awesome this would be with grilled shrimp….and that’s what I did.
