Ever made a grilled potato salad? No? Then here is your chance. I can’t lie, this recipe was a reach. I wanted to make potato salad, but I had to make the dish fit in with this month of grilling. I had no idea if it would work, but I took a leap of faith, and it paid off.

Cocoa maple grilled wings

Every chocolate month I attempt to combine chocolate with a protein. Last year I did a chocolate raspberry ribs which were quite nice.  However this year, these wings were an even bigger hit. They are sweet and salty and Smokey and lovely. All the ingredients go so well together. I will definitely be making these again.

Grilled Pesto Shrimp




Appetizing...




And then there was shrimp. The ultimate appetizer and finger food, I can’t think of a restaurant I’ve ever been to that did not have some form of shrimp as an appetizer. Hence a shrimp appetizer had to be shared.  I was inspired to make pesto last week at Valentine’s Day dinner. My sister had grilled lobster with a choice of miso, pesto or lemon butter. (We went to Rojo at Spanish court hotel in New Kingston. Food is amazzzzzzingnggggg…but I digress) I told her to try the pesto and she loved it. The lobster got me thinking that a shrimp pesto could be just as delicious as the spicy shrimp shooter I had planned. So that’s exactly what I did.

Chocolate Raspberry Ribs

Chocolate sauce on meat, yup I had to try it. I figured if I’m going to do a month of chocolate I had to at least attempt to make some kind of meat with chocolate. Obviously chicken or seafood is out of the question (I’m not that adventurous) , that left only pork and beef, and I thought ribs might be a good option, since it normally pairs well with sweeter sauces.

JJ’s Grilled bun n cheese




Independence Month!

In Jamaica, all year round but especially in Easter time, a delicious snack consumed is bun and cheese.  Now that I think about it, we Jamaicans like to slap cheese on everything, bun, bulla, bread, crackers, even in patties. And the cheese I’m referring to is the thick, salty, cheddar ‘tastee’ Jamaican cheese. When you think of Jamaica and you think of cheese, this comes to mind.
