Blueberry-nut pie

This month its all about that round crust, filled with goodness and baked to perfection. As a child my mother made pies every single Sunday; lemon meringue to be exact, that was beautiful and toasted. I’m sitting here thinking that she was wonder woman. Get three kids ready for church, go to church, come home and cook dinner, which included freshly juiced carrot juice and a lemon meringue pie? Its no wonder she hates cooking now! I guess its my turn to take the baton.

"Christmas is coming"

November brings another month of recipes that would be great for thanksgiving or Christmas dinner. I have quite a few goodies in store; ham, biscuits, potatoes, lasagna, chicken, maybe duck (I’m a little afraid of the medium rare cooking requirements of duck lol). A holiday table (at least one in Jamaica) would be incomplete without a rice dish, it’s the staple side of life. So first up in this month of holiday recipes, is the rice.

Jackfruit Grapenut Ice-cream

This very large tropical fruit is now a delicious creamy ice-cream bursting with jackfruit flavor and filled with crunchy grape-nuts for added texture. Just opening the quart container, the smell of the jackfruit hits you as if you were eating the raw fruit. The fruit has been perfectly captured in this ice-cream.

Toasted Hazelnut Coffee and Nutella ice cream

Today’s dessert is nutty, creamy sweet and delicious. It’s almost impossible to go into an ice-cream shop and not see a coffee flavored ice-cream. So I decided that us home cooks should have one in our arsenal as well. And this recipe is even better than the ones in the parlor because its jam packed with toasted hazelnuts and Nutella. As if coffee ice-cream needed to get any more awesome than it already is!

Honey Roasted Pistachios, crunchy and delicious in some sweet creamy smooth matcha green tea ice-cream. This ice-cream brings back childhood memories of summers spent in NY and several trips made the Ice-cream Factory to fill my face with pistachio grape-nut ice-cream; Creamy sweet crunchy perfection.

Sweet potato ice-cream sandwich


Independence Month!

 One of the best Jamaican desserts has to be sweet potato pudding. When made correctly, its a warm sweet treat with a custard consistency on top, a firm center with crispy caramelized edges. As a child we would sneak in the pudding and break off the edges.  For this month’s series of recipes I wanted to include  a dessert twist. And what better twist can there be than to sandwich grape-nut ice-cream between some sweet potato pudding.

'Crack' Mix





 How rare is it to purchase a ready-made trail mix, with nothing to pick out? It’s hard I know. I love having trail mix as a snack or just something “fi ketch up mi blood suga” So instead of picking through a mix of wants and want not’s I just decided to mix a batch.
