Spinach and Herb garlic bread

Yummy time again, I am the uncrowned garlic bread queen. If you didn’t know now you know. I always make really quick mini batches for dinner using left over bread ends.  This garlic bread is a little different from my usual quick ones. I added cheese and veggies to the mix just to make myself feel better about eating the whole thing.

Goat burger smothered in curried mushrooms, with melted mozzarella cheese and spinach on a butter toasted bun. This is my wildcard burger for the month. The burger I tried on a whim to see if it was even possible. It was so good, the curried mushrooms atop the goat burger really is the epitome of perfection.

BBQ Blue Beef burger


 Burger Showdown!


If there was ever a more perfect way to have a beef burger, this would be it. The beef is juicy with the delicious blue cheese sauce, caramelized onions, BBQ lays and spinach all working in perfect harmony between two perfectly toted buns. Smash burger’s ‘New Yorker’ burger was at the top of my favorite burgers in the world list but this one right here has taken the top rank for the best beef burger ever!

Callaloo and Zucchini Frittata

No bacon, no sausage, no ham and this frittata is still turnt! After making vegetable lasagna with grilled zucchini last month, I realized how delicious zucchini was. In our family it’s a vegetable that we don’t use at all! While eggplant may rear its ugly head once in a while, zucchini does not exist. Now callaloo on the other hand is a vegetable we serve for breakfast lunch and dinner. So I decided for this frittata to ditch the cured meats and go for a healthy fresh combination of these delicious veggies. You will not miss the meat one bit.

Spinach Mushroom Pizza

Who doesn’t love a great pizza, especially a great healthy pizza. Homemade pizzas are always the best, I love being able to control the ingredients; the perfect amount of sauce cheese and toppings all to my liking. I was told by a friend that he cant eat it because its too healthy for him. I took that as a good sign. This recipe is semi-homemade, as I enlisted the help of Pillsbury and Belcour to make the process even easier.

Callaloo Ravioli in callaloo alfredo sauce





Independence Month!

 Here is another Jamaican staple ingredient, the callaloo. With its thick stems and large broad leaves. This is normally sautéed with other veggies and meats like salt fish, then served for breakfast. Its also the star ingredient in a vegetarian soup called pepper pot soup. However today Callaloo will be making an appearance stuffed in ravioli.
