Garlic Grilled Cheese sandwich

It’s the last day in September and the last post for Lunchables month. Cheese sandwiches, especially ham and cheese sandwiches are another lunch time favorite.  There is something to be said about two buttery crispy pieces of bread with gooey cheese in the center. Just for a little something extra I decided to 'grill' mine in my waffle maker. An interesting twist I think the kids would love.

As kids we had our very own kitchen appliance; "the snacker sandwich maker". It’s like our mother purchased it and handed it over to us, because we were the only ones who used it, especially my brother. Bread and cheese, callaloo and cheese, sausage and cheese, you name it and any sandwich you can think of went into that snacker sandwich maker. That’s what gave me the inspiration to put the cheese sandwich in the waffle maker as opposed to grilling in a pan on the stove top.

Truly any type of grill press will work, waffle iron, sandwich press, Panini etc. All will yield a very crunchy garlicky bread with the delicious cheese. The only downfall with the waffle iron is that if you put too much cheese it runs out on the side (but escaping crispy cheese is the beauty of a grilled cheese sandwich). The garlic butter then complements the cheesy flavors and makes the bread special all on its own. You can use any cheese you like, i used a mix of mozzarella, Parmesan and pepperjack cheeses.

Ingredients (printable recipe)

2 slices of bread
¼ cup of shredded cheese (I used Parmesan, pepper jack and mozzarella mix)
1 garlic clove
2 tablespoon butter

Instructions
  • Shred your choice of cheese
  • Grate the garlic clove and combine with the melted butter
  • Once your sandwich press is heated butter both sides with the garlic butter
  • place one bread slice down fill with cheese and place the other slice on top
  • Press down an cook for the recommended time for your waffle iron or until golden brown and crispy
