Smoked Salmon Pasta

I have been trying to post this recipe since good Friday (such are the perils of Flows less than stellar internet service) It is with great pleasure that I finally post this Smoked salmon pasta, yum! Last year I made cedar planked salmon with a bacon jam, this year I smoked the salmon, mixed it with a rich cream sauce filled with herbs and pasta. It’s a great main dish or as a seafood side dish.

In two week Jamaican lobster season will be officially closed. Come April 1st Jamaican Spiny lobster will be illegal to purchase live and after April 21 its off limits whether dead or alive. All the lobster lovers will have to wait until July 1st when they are back in season. So here is the last lobster recipe of the season, grilled parsley garlic Lobster.

Another Jamaican favorite is brown stew fish, a close cousin to steamed fish and my father’s favorite way to have a fresh snapper. With stew fish you get the best of both worlds, it basically combines fried fish and steamed fish into one lovely pot.

I always have to include lobster in seafood month. Even though I dislike lobster, I’m doing two lobster recipes this month. This, the first of the two, is an experiment with a non-traditional way of cooking lobster. I hardly ever see persons deep fry lobster the same way we do shrimp or even crab. It tuned out pretty good, and that’s coming from a girl who hates lobster.

I had written my list of recipes to make for this month since last year, and was on the fence about a fish taco. I wanted some kind of avocado sauce, homemade salsa and all kinds of things. However avocados are out of season, can’t find them anywhere. The grocery store did not have any snapper filet. I wanted to make authentic tortilla shells with masa harina but as you guessed it, nowhere to be found here in Mandeville. So I was ready to give up on my taco dreams. Then my sister over the last week has been making tacos like crazy, and my father got a huge catch from his fish guy; snapper, parrot, jackfish and butter fish. So I figured what the heck, let’s make tacos.
