Beef and macaroni are the epitome of a belly full. If you were a fan of hamburger helpers as a kid, this just might be up your alley. It tastes more grown-up but is still giving me an ‘I’m a kid eating a sloppy joe at summer camp vibe’. It is the dinner that will please both adults and kids and the whole pot only cost $1586.78 JMD. It can serve maybe 6-8, but let’s say it serves 6, that’s only $264.46 per serving, not bad at all.

Happy new year everyone, welcome to year 8 of Greedy girl cooks, has it really been that long? About two months ago I had asked on youtube suggestions of want to cook more of? Meat, specifically chicken dishes were the resounding top choice along with an interesting request to create affordable recipes. His exact words were “meals for college students”. If you ever been to college, you know how important every penny is when it comes to feeding yourself. I for one, lived on cup-o-noodles and easy mac, I gained the freshman 15 to prove it. Today’s recipe is a simple quick and flavorful dish that will have you fed for three days at least.

Cilantro Grilled Chicken Sandwich


If perfection had a flavor...

It's the herb you either love or hate, the great cilantro. This recipe is very long overdue. I finally had a bunch of cilantro in my fridge. I managed to use it for this recipe before it all went bad. I have mentioned on this blog about the best-grilled chicken sandwich ever that I had on Prince street in New York. It was our spot after we did our nails at Marie Nails. I finally recreated it, and it is epic. If you don't like cilantro, I'm shocked that you are still reading, no need to continue.

June Plum Juice

I can’t begin to tell you the amount of June plums we have wasted in this household. We have several trees, but for some reason, no one eats them, they drop off the tree and rot, or when we pick the ripe ones and take them inside, they sit on the counter until they get thrown out. One Sunday My father came into the kitchen and was complaining of the lack of juice options in the refrigerator meanwhile the 12 June plums he picked the day before were staring at us on the countertop. I said enough is enough.

This is a sure winner; it is one of those recipes that is easy to whip up after work for a fast but flavorful dinner. Shrimp, and fish seasoned in a lovely marinade bursting with Jamaican flavors and then grilled. I made this for Sunday dinner two weeks ago and not a soul went to bed hungry.

I am even contemplating making some doughnuts and bagels. This banana bread is a quick tweak to my existing chocolate chip banana bread recipe.
