Burger Showdown!
Can you believe that summer is almost over? It’s the last week and a
half to the beginning of school and everyone is in a mad dash to get ready. What
I think we should be doing is getting in those last BBQ’s, while basking in the
non-existent morning traffic. Why are we in such a rush to get back to the
hectic school term? The first step in enjoying the last few weeks is to indulge
in this delicious chicken burger. It’s sweet, and spicy, filled with delicious
pineapple and crispy bacon.
To grill or not to grill that is the question. I was contemplating
doing a fried chicken patty, but then felt that the dish needed a grilled chicken
patty to impart the traditional burger smokiness. For the sweet, I used guava
jam and grilled pineapples (In truth I went a little over board on the guava
jam). As for the spicy, I added red pepper flakes to the burger and the patties were
seasoned with a hot scotch bonnet pepper. Here in Jamaica depending on who
grows the peppers, they tend to vary in their degree of heat so the hotter the
pepper the less you will need.
My burger patties were large and thin, but if you like thicker burgers
you can certainly make them thicker; just make sure to test the inside to make
sure it’s cooked. The only thing I would recommend adding to this burger is
some mayo on the top bun (how could I have forgotten) but apart from that its
perfection.

1 lb CB chicken breast ground
1 teaspoon Salt
¼ teaspoon Black pepper
½ small Onion chopped
¼ teaspoon scotch bonnet pepper minced
¼ teaspoon Allspice
1 tablespoon Coconut oil
½ teaspoon smoked paprika
1 teaspoon liquid smoke
½ cup panko breadcrumbs (optional)
