My first turkey neck ever and it was quite yummy. This one pot of delicious turkey neck and dumplings was super filling. The epitome of a belly full on a budget. I’m not sure why turkey neck has such mixed reviews. People act as if it is disgusting or it doesn’t taste good. But this tasted really good to me. I felt like I was eating jumbo chicken necks. I made some lemon pepper ribs some time last year and they were phenomenal. I decided that I need to create a full meal on a budget using chicken and a similar lemon pepper sauce. The best part; it uses one bag to marinate it all, and one sheet pan to cook it. Beef and macaroni are the epitome of a belly full. If you were a fan of hamburger helpers as a kid, this just might be up your alley. It tastes more grown-up but is still giving me an ‘I’m a kid eating a sloppy joe at summer camp vibe’. It is the dinner that will please both adults and kids and the whole pot only cost $1586.78 JMD. It can serve maybe 6-8, but let’s say it serves 6, that’s only $264.46 per serving, not bad at all.

Ginger garlic Honey Fried Chicken


 

I don't even know where to start with this chicken. It is sweet, salty, crunchy, garlicky, full of ginger, just wholly perfect. The moistest fried chicken breast, crispy even when drenched in the sauce. I highly recommend this recipe. Dieting? Don't even bother to read this post.

Today we have another pumpkin soup, but this time it's smoked. When was the last time you smoked a pumpkin? if your answer is never, then I think its time we change that. Smoked pumpkin is so much better, adds a lovely complex flavor to the subtle sweet pumpkin.

This is a sure winner; it is one of those recipes that is easy to whip up after work for a fast but flavorful dinner. Shrimp, and fish seasoned in a lovely marinade bursting with Jamaican flavors and then grilled. I made this for Sunday dinner two weeks ago and not a soul went to bed hungry.

They always say when life gives you lemons make lemonade, but the saying assumes you have sugar and water. I have been MIA for what feels like the last 20 years from blogging. Life gave me a whole bag of lemons when my husband died four days after my last post, while I was 7 months pregnant. I was fresh out of sugar and water. Thank God for friends and family, who not only gave me sugar and water but made the lemonade for me and fed it to me. Fast forward four months later, Baby is born and healthy, I’m back to cooking and finally back to blogging. I have lost my biggest fan, but I’m still here by God’s grace. Next ill start back on video posts. Normally April would have been my month for vegan and vegetarian recipes, but I’m mixing it up and just finishing off the month with maybe 5 seafood recipes. The first being a super easy and very flavorful shrimp dish.

If you’re thinking how is a whole fish even an option for Christmas dinner? then you have never had a Jamaican Christmas dinner. Fried escovitch fish is always an available item and in our family, we don’t do filets. We serve whole fish.  Usually, it’s the only seafood item on the table for anyone who doesn’t eat other animal protein, on second thought maybe we will have a shrimp curry in addition. But let us say you are that one guest who is pescatarian, then chances are the whole fish would be the highlight on your plate. With that said, I decided to dedicate this fish to that person who is coming to Christmas dinner, who may be tired of the escovitch fish (as if that’s even possible).

Maple BBQ cauliflower nuggets

I guess I’m the last one to truly get on the cauliflower train. This is the first time I have purchased cauliflower since 2015 when I made a gratin and some fried cauliflower and broccoli bites. I absolutely adore this recipe. It is one that many meat eaters would approve of, most probably wouldn’t even know they were eating cauliflower. My mother made a food network version last month and could not stop talking about how good it was. So, I decided to add it to the list.

Coconut Shrimp

This is my sisters favorite dish. Actually, let me take that back, this was my sisters favorite dish before she suddenly developed an allergic reaction to shrimp in her 20’s. After years of sampling coconut shrimp from every single restaurant we have ever been to that sells it, her heart sinks because she can no longer eat it. She was indeed the coconut shrimp queen. This post is in dedication to her former self, I pray she does not suddenly develop allergies to lobster, because then she would really be devastated.

This was a simple and easy dish. I only had to get one pot dirty, and in all fairness if I didn’t use any curry powder, I wouldn’t have made a mess of any pots at all. Seasoned conch, tossed with pumpkin, okra and spices wrapped in foil and cooked until tender.

I always make it, and it tastes good, but to me there is always room to grow. Today I went up 5 more levels. This fried chicken was an absolute 8.99 out of 10. And I say 8.99 only because I burnt it.... a bit.

It’s fairly simple to make and does not take up much time. Quick and easy is a good combination for the holiday dinners where there are so many other things to prepare. Salty, Sweet, sticky and full of flavor, just the way a drumstick should be.

I absolutely adore Asian cuisine. I was Introduced to Indian food by my friend Petra in NY. While I was living there during my late highschool and college days we would always talk about her favorite Indian dishes. She took me to a few restaurants and indeed I did enjoy the food. I was always a fan of Chinese and Thai but over the years developed an appreciation and love for all the food the continent has to offer. I always cook Chinese food at home, but ever thought to try Indian until now.
