Happy new year everyone, welcome to year 8 of Greedy girl cooks, has it really been that long? About two months ago I had asked on youtube suggestions of want to cook more of? Meat, specifically chicken dishes were the resounding top choice along with an interesting request to create affordable recipes. His exact words were “meals for college students”. If you ever been to college, you know how important every penny is when it comes to feeding yourself. I for one, lived on cup-o-noodles and easy mac, I gained the freshman 15 to prove it. Today’s recipe is a simple quick and flavorful dish that will have you fed for three days at least.

What’s better than a platter full of delicious fritters? It could be saltfish, banana, plantain, bacon or sausage it does not matter, I’ll take them all. I had an over ripe plantain in the refrigerator for the better part of a week and seeing as though it was my morning to make breakfast, I figured why not make some fritters.

I can't believe its butter!

I can't believe I made butter! Every time I make whip cream, a little voice says, "Not too much. Don't want it to become butter," but for some reason, I never took it literally. It's like I didn't believe that if I kept on whipping, it would become butter even though I knew that that is how they make butter. This time I kept on beating, but not before smoking the cream.

Kimchi is to Korea as steamed cabbage is to Jamaica. Honestly steamed cabbage with corned beef is more like it, but since this month is about no meat, I left out the salty delicacy and made a yummy dish of cabbage and carrots on all its own.

Maple BBQ cauliflower nuggets

I guess I’m the last one to truly get on the cauliflower train. This is the first time I have purchased cauliflower since 2015 when I made a gratin and some fried cauliflower and broccoli bites. I absolutely adore this recipe. It is one that many meat eaters would approve of, most probably wouldn’t even know they were eating cauliflower. My mother made a food network version last month and could not stop talking about how good it was. So, I decided to add it to the list.

And I can still come up with even more ways to use them. This is a very herby and flavorful potato salad. Anyone who loves chives and pistachios will adore this. And its vegan!

Jamaicans consume a lot of porridge. Peanut, hominy, cornmeal, plantain, rice, oatmeal, cream of wheat, green banana, bulgur, you name it. If a porridge can be made from it, we make it. My favorite ones are hominy, plantain and oatmeal. Today I try my hand at green banana.

Spicy Jackfruit fried Rice

Hello my name is the Greedy Girl and I enjoy tricking my husband who does not eat fruits, into eating fruits. This is NOT one of those jackfruit dishes that will make you think you’re eating chicken. Reason being I used ripe jackfruit. For a sneakier way of incorporating the jackfruit you would use young jackfruit in brine, but it takes a while to cook and become tender. So I decided to skip that all together and just use the ripe ones which we can get easily in Jamaica once it’s in season. And let me tell you, it is the season.

Callaloo and sweet potato cakes

My health conscious cousin Lauren came over and cooked two sweet potatoes. She was determined to stay away from processed carbs and have curry goat with sweet potatoes. Needless to say she ended up eating curry goat with white rice with a side of bun and cheese. I ended up with two sweet  potatoes in my refrigerator for about a week. So instead of wasting them I decided to make a recipe to utilize them. I envisioned something sort of like a crab cake, soft on the inside with a crispy exterior that would be great with tartar sauce.

Savory Bread Pudding

Recipes have a funny way of transforming themselves. I had every intention of making some savory bread pudding waffles with a pepper jelly glaze ( which was really some store bought pepper jelly melted in the microwave…soooo good) I went to my mother’s house because I did not take the waffle sandwich maker when I moved. We turned that kitchen upside down and we have yet to find the waffle iron inserts. Needless to say, I was highly annoyed. Because bread pudding really need to cook thoroughly, I didn’t think the sandwich press inserts could do the job as well as the waffle inserts. However because I had no other choice but to make it work, I tried cooking this recipe three ways.

I am finally getting really good at rice! I guess once you get the ratio you can mix and match with flavors and ingredients and still get great results. This rice is so yummy, its vegan and can totally be a complete meal for anyone who does not eat meat.

Spicy pumpkin potato salad

Last May while in NY for mother’s day and a slew of graduations, I made a roasted poblano pepper potato salad that was so good. It was definitely in my top 5 potato salads ever made.  Every time I make a potato salad it is always a unique one with a different flavor and completely different ingredients. Today I decided to bring back my roasted poblano pepper potato salad with sweet roasted pumpkins added to the mix.

What is rasta pasta? The general consensus is that it’s any pasta dish which utilizes the colors of the Rastafarian flag, yellow , red and green. I notice when you google rasta pasta, the results are filled with a whole bunch of pasta recipes which contain meat. I have to admit I found it quite amusing, since the true Rastafari is vegan. Some die hearted ones don’t even use heat to cook their food, let alone top their pasta with grilled chicken. So I decided I would stick to what I’m sure is the origin and make a vegan, Rasta pasta.

Have you ever fried avocado? Its not at all bad. I was totally expecting to hate it, but the sandwich was absolutely delicious. The salsa, crunchy avocado, and that mayo atop the toasted hot dog rolls, is amazingly delicious. This is a must try.
