Jamaican Plantain Fritters

 


Mmm Mmm Good!

What’s better than a platter full of delicious fritters? It could be saltfish, banana, plantain, bacon or sausage it does not matter, I’ll take them all. I had an over ripe plantain in the refrigerator for the better part of a week and seeing as though it was my morning to make breakfast, I figured why not make some fritters.

Jamaican Lasagna



"JAMAICAN FLAVORS"

It’s always a good day when you make lasagna with totally unconventional flavors. I had to infuse this one with as much Jamaican flavors as I could. The only thing left to go in there was some ackee. It’s loaded with callaloo, plantain, coconut milk, jerk bacon, the works. This might just be better than a traditional lasagna…just might!

This February is all about Jamaican flavors. Most of the dishes I will cook are probably not very traditional but they embody the flavors of home. Coconuts, all spice, garlic, onion and more coconut. The first dish is something I made up in my hungry state in need of some breakfast.

A few years ago my sister and I were both interns in Manhattan at different city departments. She was with NYC media, and me with the department of city planning.  It was amazing that our offices were within walking distance from each other because that meant daily lunch dates. We had Italian, so much Cuban, food trucks, Chinese, you name it we had it. After a while we realized that this daily lunch thing was wreaking havoc on our pockets so we decided to carry lunch and have it in the park. Before we opted out of the lunch restaurant hopping scene, We had our first Jibarito at a Puerto Rican restaurant named Sazon.

The true test of a good vegetarian burger is to have a meat eater take a bite and not realize there’s no meat in it; this burger has met and passed that challenge. Not only does it fool the eye, it has so many layers of flavors that it also tricks the palette.

One of the easiest Jamaican snacks around, and It’s also pretty delicious. Served in many restaurants and prepared by hungry people who have no patients to wait until their plantains have ripened. It’s a great use of green plantains, second only to plantain porridge…but that’s for another post!

If your read my last post you will remember that I was a bit sick. I didn’t get a chance to film the weekly recipes on Saturday so the intent was to wake up Friday morning make and post the lunch before heading to work. Come Thursday night and a huge work emergency that required I be out of the house by 7:30am in order to meet a 3pm deadline thwarted all greedy girl plans. So it is with great displeasure I bring to you my non-video post a day late; a simple, seemingly ordinary but extremely delicious combination of vegetables that will delight the taste buds.

Giant Plantain Tart


Easy Bake!



You can’t call yourself a Jamaican if you have never had a plantain tart. For me plantain tarts came in at a solid second place, since as a child my favorite Jamaican pastry hands down was the gizzard. That however would definitely not fall under the easy bake category. In contrast the plantain tart is quite simple, especially If you have the ready-made frozen pie shells.  And to make this even simpler why not make one giant tart that your friends and family can take a slice out of rather than the time consuming job of making individual little bite sized tarts; easy right?
