Jamaican Plantain Fritters

 


Mmm Mmm Good!

What’s better than a platter full of delicious fritters? It could be saltfish, banana, plantain, bacon or sausage it does not matter, I’ll take them all. I had an over ripe plantain in the refrigerator for the better part of a week and seeing as though it was my morning to make breakfast, I figured why not make some fritters.

Am I the only one who is obsessed with salt and vinegar potato chips? I simply cannot be. I got hooked on them around 2013. If you are like me, then this will be your new favorite way to cook potatoes. It literally tastes like you popped open a bag of salt n vinegar lays.

Caramel Apple Pie

No way I could have a month of pies and not do an apple pie. In the world of pies, apple pie is president and pumpkin pie is vice. I had some caramel sauce left over from some bread pudding I made and decided it would be perfect with some granny smith apples. Quite possibly the best use I have ever found for left over caramel. 

Gizzada Pie

Gizzada is a Jamaican coconut tart. It's usually made in little pastry rounds about the size of your palm. I decided that I would try my hand at a giant gizzada, essentially turning it into a huge gizzada pie. I mean what’s the difference between a tart and a pie anyway, depth?

Easy pineapple lime Jam

Jams are so amazingly versatile, you might think they are only meant for crackers and bread. But they can really add a delicious element to so many dishes. I’ve put jam on a pizza (which I’ll post a recipe of later) I’ve used jams in BBQ sauces and its my go to ingredient for sweet and sour sauce. All around its something I use often, so it makes sense that I would have a scratch made pineapple jam recipe.

Store bought rotisserie revamp 7: Rotisserie chicken and cheese hoddeok
This is the last recipe for rotisserie chicken month. Hoddeok is a yeast dough filled with sugar, nuts and cinnamon then pan fried. When fried the sugar and cinnamon melt on the inside leaving you with a sweet gooey filling and crunchy nuts. That’s how its normally done. Today I decided to revamp it and add chicken and cheese to the mix.

Cheesy Jack Fruit seed spread

This is year four of my vegetarian/ vegan month so a girl has ‘gats’ to get creative. It all started with me doing research for another recipe I will be doing later on this month using the flesh of the jack fruit. Come to find out the seed is also edible. People boil it, roast it, all kinds of stuff. This is my first ever time cooking or eating jack fruit seeds. And I decided the easiest thing to make as a beginner in the game was to make a dip/spread

Fried Broccoli & Cauliflower bites

Fresh out of the fryer and slightly cooled, crispy, flavorful, aromatic and delicious. That is how these fried broccoli and cauliflower bites can be described. The idea to dip broccoli in a batter and fry it just never occurred to me. Yes I know what a tempura is and I’ve had shrimp and asparagus tempura several times, I’ve even deep fried okra. However the thought to batter fry broccoli had never etched a place in my brain until now.  This all occurred a few weeks ago while I was being thoroughly entertained by watching Auntie Fee. When she did her fried broccoli recipe, a light bulb definitely went off.

Brownie cookies

I have made quite a few cookies, but this one right here?....arguably the best cookies I have ever made in my life. It’s no secret that I love my cookies chewy. Not thin, not crispy, not big, but thick and chewy.  Last year I tweaked Alton browns cookie recipe and came up with a superb chocolate chip oatmeal cookie. This years cookie just might have beaten the superstar of last year’s chocolate month. It is divine, if you love chocolate, or cookies you must attempt to make these!

Scotch pumpkins, not eggs

 Scotch eggs, are a popular picnic food  in Britain. It’s a soft or hard boiled egg, wrapped in sausage, breaded then baked or fried.  It’s sold everywhere in Britain even gas stations (shocking I know).  Serve them with ranch sauce, honey mustard or gravy. I decided to put my own little spin on this and make it even yummier by replacing the eggs with balls of pumpkin. What a great way to cut the cholesterol levels .
