Today’s cheap eat is elevating the left-over Jamaican beef patty. The beef patty is probably one of the most consumed dishes in Jamaica daily. It’s the Jamaican grab-and-go fast food. Deliciously seasoned meat baked inside the perfectly flakey crust, what could be better? Well, this breakfast patty is what is better! If you ever end up with leftover beef patties this is the way to bring them back to their original glory.

How often do we eat beef for breakfast? Depending on where you live that may be a whole lot, but in my family, not very often. We do pork sausages, bacon and chicken. The only time we will do beef for breakfast is when we are having dinner left overs. I wanted to do a recipe that was not a typical beefy dinner recipe. This is basically a beef breakfast sausage seasoned as if it were a meatloaf. Paired with all the yummy things you would expect to see on a breakfast platter.

What do you do on a Saturday morning when you wake up and have the task to make breakfast or three hungry mouths? You make the breakfast hash of champions. This breakfast was soooooo good. Last Saturday I made a huge pot of this, everyone was so hungry that I could barely get pics of the food. It’s a real hearty meal that will have you full the entire day.

Hello my name is Greedy and I HATE smoothies, shakes or any form of meal replacement drinks as breakfast.  It’s only fair that after fasting all night I be allowed to chew the next morning. And If I must chew on something it might as well be this ‘bombtastic’ omelette!

Ricotta is my new favorite thing; it’s so versatile and subtly delicious. Here on greedy girl cooks we are no strangers to roasted red pepper either. The flavors of the pepper are truly enhanced by roasting them. And paired with ricotta, they make this omelette extra delicious.

After patty month had ended I had some beef patty filling left over. We took this left-over meat and used in a few omlettes that were amazingly delicious. It was then the idea for a beef filled omelette came into my thoughts. Since I had no intention of remaking a whole pot of beef filling just for one omelette, I decided to incorporate the beef in a different way. Suddenly the cheese burger pops right in my head and I knew that would be the omlete flavor inspiration for this post.

Well hello my greedy guys and gals, welcome to the second annual greedy girl pumpkin month. If you were here with me last year you will now realize that every October I will dedicate the recipes to this one round orange gourde.  Last year I made 9 pumpkin recipes everything from soups to panna cotta.  If you’re like me, you will agree that breakfast is the best meal of the day. This recipe is my attempt to combine my favorite breakfast dish with a not so conventional ingredient. Let’s face it, when was the last time you ever had a pumpkin omelet?

Callaloo and Zucchini Frittata

No bacon, no sausage, no ham and this frittata is still turnt! After making vegetable lasagna with grilled zucchini last month, I realized how delicious zucchini was. In our family it’s a vegetable that we don’t use at all! While eggplant may rear its ugly head once in a while, zucchini does not exist. Now callaloo on the other hand is a vegetable we serve for breakfast lunch and dinner. So I decided for this frittata to ditch the cured meats and go for a healthy fresh combination of these delicious veggies. You will not miss the meat one bit.

Hungry Man Scramble

I take my eggs very seriously; as a matter of fact I take breakfast very seriously. It’s surprising to me that I took this long to dedicate a month of blogging solely to breakfast foods.  This post is about the most filling delicious and healthy scrambled egg platter you will ever eat. It’s so good in fact that after a serving of this breakfast, you would have cast a very powerful spell on your significant other, enough so that thoughts of proposals will begin to swarm in the minds.

 So be warned, if it is your intent to have a fling, no strings attached, non-committed, no marriage relationship, DO NOT COOK THE FOOD ON THIS BLOG AND SERVE IT TO SAID PERSON!  But if you’re trying to lock it down real quick…stick around.

Garlic and herb egg puffs

This recipe just screams weekend brunch. These garlic herb scrambled eggs in a flaky puff pastry shell are sure to open appetites. The garlic and herb compound butter gives the scrambled eggs more pizazz, it’s not every day someone has garlic eggs. I really love when a dish looks complicated but ends up being extremely easy, and this appetizer is one of those dishes.

Scotch pumpkins, not eggs

 Scotch eggs, are a popular picnic food  in Britain. It’s a soft or hard boiled egg, wrapped in sausage, breaded then baked or fried.  It’s sold everywhere in Britain even gas stations (shocking I know).  Serve them with ranch sauce, honey mustard or gravy. I decided to put my own little spin on this and make it even yummier by replacing the eggs with balls of pumpkin. What a great way to cut the cholesterol levels .

Dutch Pancakes 'Pannekoek'

Noun; A thin, flat cake of batter, usually fried and turned in a pan.


It’s really amazing the different ways pancakes are made in the various cultures; similar in so many ways while maintaining their special unique qualities.  This Dutch pancake or Pannekoek is no exception, one of my favorite discoveries, it is absolutely genius!  To combine all the breakfast staples into one dish, its almost like a pancake omelet or better yet a breakfast pizza.

Cookie cutter eggs




Woke up one weekday morning and began to browse on Facebook (Facebook first thing in the morning? Hello my name is Tay and i'm an addict). I follow a page called interesting and creative designs. They posted some food art, where someone made ring molds from green and red bell peppers which they cooked sunny side eggs inside. GENIUS!!! Breakfast was served.
