Chicken Kale and Walnut Salad

 Low-Calorie Living

So you know we had to do a salad. And to be honest I may do another one in this series. I love a good salad, with all the elements; sweet, a bit of spice, salty, crunchy, just all-around perfect bite. This salad is remarkably easy to make, yet it does pack a punch of lovely flavors. If this sounds like something, you’re interested in keep reading for the recipe.

Regular degular shmegular Potato salad

Brunch knows best

Who wants potato salad? That’s the line my sister says in a family home video we have. She was walking around with a fork full taunting me as I set the table. It was a Sunday dinner tradition. My mother used to throw down every Sunday. She is the reason my sister is absolutely obsessed with potato salad. So while I am setting the table (by climbing on top of it) my sister would taste the potato salad. No Sunday dinner, potluck, bbq or brunch is complete without it.

Spicy pumpkin potato salad

Pumpkin Everythang!

Last May while in NY for mother’s day and a slew of graduations, I made a roasted poblano pepper potato salad that was so good. It was definitely in my top 5 potato salads ever made.  Every time I make a potato salad it is always a unique one with a different flavor and completely different ingredients. Today I decided to bring back my roasted poblano pepper potato salad with sweet roasted pumpkins added to the mix.

Grilled seafood salad with mango salsa

Mango is in season!

When cilantro, grilled fish and mango show up to the party you know it’s going to be wild. This is by far one of, if not the best salads I have ever had. Flavors are bursting all over, sweet, salty, spicy, Smokey and everything else in between. A very light and delicious summer salad you will probably want to try.

Mango melon fruit cocktail

Mango is in season!

I think skinless grapes have a special place in fruit heaven, because they are just too epic, especially in this recipe. Who doesn’t love chilled fruit cocktail from the can? A whole lot of people do, so imagine those same fruits instead of being soggy and overly sweet, being fresh, vibrant, and crunchy. Not to mention dripping in a mango melon sauce instead of corn syrup? That’s what’s happening in this post, homemade fruit cocktail.

kale and zucchini macaroni salad

M...eat...less

There are two things in this world that completes a meal; potato salad and or Macaroni salad. Today I am stepping into the world of macaroni salad. This cold and delicious dish, pairs so beautifully with hot food, especially fried chicken. But since this is meatless month let’s not focus on the chicken but on the unique addition of kale and zucchini.

Creamy Honey Coleslaw

Summa Summa Summa time!

I previously wrote that the Cesar salad is the summer salad king. Well if Cesar salad is the king coleslaw is the queen or at least the prince or princess.  A perfectly seasoned and flavorful cold coleslaw does wonders for a burger, hotdog or aside some delicious fried chicken, bbq chicken or ribs. It’s a recipe we must all have under our belts for the summer.

Avocado lettuce wraps

Lunchables

If your read my last post you will remember that I was a bit sick. I didn’t get a chance to film the weekly recipes on Saturday so the intent was to wake up Friday morning make and post the lunch before heading to work. Come Thursday night and a huge work emergency that required I be out of the house by 7:30am in order to meet a 3pm deadline thwarted all greedy girl plans. So it is with great displeasure I bring to you my non-video post a day late; a simple, seemingly ordinary but extremely delicious combination of vegetables that will delight the taste buds.

Warm Kale and Pumpkin salad

"Pumpkin Everythang”

Pumpkin salad surprisingly has been my biggest challenge so far. In trying to conceptualize the dish I made a few decisions very early on...

  •  I’ve never been a fan of warm salads, but this had to be one, because raw pumpkin es no bueno
  • Texturally pumpkin gets mushy no matter how it’s cooked, so I needed a way to prepare it so it would maintain its shape for the most part.
  • I didn’t want it boiled
  • I didn’t want it roasted
  • I didn’t want a pumpkin dressing

Doc’s Macaroni Salad

Cookout and BBQ Season!

I have realized that my love for cooking must have come from my grandmother Doc. We spent most  summers with her as children, and and even though she did not actually teach us how to cook,  I vividly remember  how much she enjoyed cooking and serving people. She was always cooking; there was a large spread of food every single Sunday, without fail. She loved Christmas, thanksgiving, making green bean casserole, turkey and chicken salads, lasagna the works.
