Red pepper Beef mince noodles

Pantry Dinner

I don’t always make quick and easy recipes; I think there is beauty in taking the time to slowly develop flavors. But other times, you need dinner in 30 minutes or less, and that’s fine too. You should keep this recipe saved for the days when the ingredients are low. I went through my freezer, pantry and refrigerator grabbed a couple ingredients, and here we all are.

6 hour roasted tomato spread

Umami Bomb!

There is nothing more delicious than the perfect BLT. The perfect sandwich with its salty crispy bacon, crisp lettuce, pillow-soft bread, and tomatoes. In this recipe, the tomato has taken a new form and it has become this incredibly flavorful and rich tomato spread. Once you make your BLT sandwich with this spread, you will never go back.

Cajun Turkey Neck and Dumplings

 Belly Full on a Budget

My first turkey neck ever and it was quite yummy. This one pot of delicious turkey neck and dumplings was super filling. The epitome of a belly full on a budget. I’m not sure why turkey neck has such mixed reviews. People act as if it is disgusting or it doesn’t taste good. But this tasted really good to me. I felt like I was eating jumbo chicken necks. I have never had turkey neck before. If you are a lover of turkey neck keep reading.

Sheet -Pan Lemon Pepper Chicken and Potatoes

Belly Full on a Budget

I made some lemon pepper ribs some time last year and they were phenomenal. I decided that I need to create a full meal on a budget using chicken and a similar lemon pepper sauce. The best part; it uses one bag to marinate it all, and one sheet pan to cook it. It yields juicy chicken with a creamy sauce full of pepper, garlic, and lemon flavors. keep reading to see the full recipe.

Belly Full on a Budget

You can’t ever go wrong with a vegetable stir fry. It's cheap, it's quick and it's hella filling! this dish was perfection and it easily feeds four persons with two packs of noodles. To be honest I could have eaten the entire thing myself. But cooler heads prevailed, keep reading for the recipe.

Breakfast Jamaican Beef Patty

Belly Full on a Budget

Today’s cheap eat is elevating the left-over Jamaican beef patty. The beef patty is probably one of the most consumed dishes in Jamaica daily. It’s the Jamaican grab-and-go fast food. Deliciously seasoned meat baked inside the perfectly flakey crust, what could be better? Well, this breakfast patty is what is better! If you ever end up with leftover beef patties this is the way to bring them back to their original glory.

Crunchy Cinnamon Toast or Cinnamon toast crunch?

 Belly Full on a Budget

I am wondering why I have not been using dulce de leche to make my French toast all this time. It is so good! This toast was beyond delicious. No cinnamon toast crunch cereal was harmed in the making of this dish. However, it hits all the right notes.

Seasoned Rice

 Belly Full on a Budget

Happy new year everyone, welcome to year 8 of Greedy girl cooks, has it really been that long? About two months ago I had asked on youtube suggestions of want to cook more of? Meat, specifically chicken dishes were the resounding top choice along with an interesting request to create affordable recipes. His exact words were “meals for college students”. If you ever been to college, you know how important every penny is when it comes to feeding yourself. I for one, lived on cup-o-noodles and easy mac, I gained the freshman 15 to prove it. Today’s recipe is a simple quick and flavorful dish that will have you fed for three days at least.

Breakfast Fried Potato Salad

The Breakfast of Champions

I should have called this dish loaded home fries; however, I already edited the video with the "breakfast fried potato salad" title. So "it is, what it is." And what it is, is the most delicious potato dish I have made in quite a while.

Jerk Chicken and Mushroom Tart

On your Tarts!!

Apparentlyly, fairy Godmother granted the chicken pot pie a wish and she got to dress up; transformed into this tart, and went to the ball. That is what I think of when I look at this elegant looking tart. Phyllo/Filo dough can be so unforgiving at times and other times every wrinkle looks like a work of art.  I wanted to make a pie where imperfections become perfections. A traditional pie crust is sometimes not so forgiving, but phyllo/filo dough will do the trick.

Cilantro Grilled Chicken Sandwich

If perfection had a flavor...

It's the herb you either love or hate, the great cilantro. This recipe is very long overdue. I finally had a bunch of cilantro in my fridge. I managed to use it for this recipe before it all went bad. I have mentioned on this blog about the best-grilled chicken sandwich ever that I had on Prince street in New York. It was our spot after we did our nails at Marie Nails. I finally recreated it, and it is epic. If you don't like cilantro, I'm shocked that you are still reading, no need to continue.

Jamaican Fried Dumplings

Low & Slow

If you want fried dumplings and have little to no oil, then keep reading. It's a very similar recipe to the one I already have posted with just a slight variation. However, this post is special because I filmed it. So you can watch me make it too. All you need is a bit of pre-planning and patience.

Smoked Garlic and herb butter

I can't believe its butter!

I can't believe I made butter! Every time I make whip cream, a little voice says, "Not too much. Don't want it to become butter," but for some reason, I never took it literally. It's like I didn't believe that if I kept on whipping, it would become butter even though I knew that that is how they make butter. This time I kept on beating, but not before smoking the cream.

Salt and Vinegar Roasted Potatoes

Snack or Sidedish?

Am I the only one who is obsessed with salt and vinegar potato chips? I simply cannot be. I got hooked on them around 2013. If you are like me, then this will be your new favorite way to cook potatoes. It literally tastes like you popped open a bag of salt n vinegar lays.

You're new favorite Platter!

This is a sure winner; it is one of those recipes that is easy to whip up after work for a fast but flavorful dinner. Shrimp, and fish seasoned in a lovely marinade bursting with Jamaican flavors and then grilled. I made this for Sunday dinner two weeks ago and not a soul went to bed hungry.

Nutella filled banana bread muffins, with Pistachio streusel.

"Quarantine Cooking"

My sister said, what is it about being stuck at home that makes you want to bake? My answer to that was I do not know. But I for one am in the mood to just cook and bake up a storm. I am even contemplating making some doughnuts and bagels. This banana bread is a quick tweak to my existing chocolate chip banana bread recipe. If you got that recipe down pact, then all you must do is top it with some streusel and you are good to go.

Grilled Salmon scallion pancake tacos with a fresh apple relish

"Something smells fishy"

I am still trying to get the hang of this motherhood blogger thing. It’s been quite a task to do these recipes and these blog posts with my little Elizabeth. According to The Bump, at 10 weeks old, she should be taking longer naps, sleeping even up to 6 hours. Today I got the longest sleep from her ever. She gave me roughly four and a half hours. This is the one and the only reason why I had time to make, eat, photograph and blog this recipe all in the same day. YAY ME!
