Everybody knows about escovitch fish, but
not many have ventured into the land of escovitch chicken. It’s really the marriage of two wonderful
things, crispy fried chicken and spicy vinegary pickle sauce. If you love
either of the two, or both, this is the recipe for you.

Crispy Rosemary garlic chicken
Fowl
It’s the second to last chicken recipe of the month. Garlic and rosemary infused chicken pan
roasted and then transferred to the oven to get the crispiest skin imaginable.
It so easy and so flavorful made a simple sauce with the pan drippings on the
side.

Jamaican Curry Chicken
Fowl
Finally, after all this time, I’m adding a Jamaican curry chicken recipe
to the blog. It is intensely rich and flavorful. If you don’t have the time to
wait on goat to cook or if you don’t like goat, you can certainly make curry
chicken in a shorter time. One of our
favorite go-to weekday dinners.

Jamaican Brown Stew chicken
Fowl
Finally posting this recipe to the blog, can’t believe it took me this
long considering we cook this pretty often. Brown stew chicken is a Jamaican
staple. You can find it in every cook shop and restaurant that serves traditional
Jamaican cuisine. Everyone has their signature way of preparing it, here is
mine.

Maple Sage Chicken Sausage
Fowl
I think sausages are that one thing that everyone sees as intimidating.
We all just assume it’s so complicated, you need casings and sausage stuffers
and fancy meat grinders. Today’s recipe proves that making a delicious 100%
meat sausage, takes the same amount of effort as any other chicken dish I have
made thus far. So if its homemade sausage you want, you can get it.

Spicy Buffalo Wings
Fowl
How about some wings, no way I could do chicken month and not do some
buffalo wings. I already shared with you guys the easiest and best ever honey bbq wings so it only makes sense that I complete the duo and drop a recipe for
spicy buffalo wings.

Not your mamas chicken roulade!
Fowl
It’s been a while since I made something fun and crazy. I figured if I’m
going to step outside the box chicken month might just be the month to do it. Chicken,
juicy sausage and cheese, if you don’t like any of those three ingredients this
is not the post for you. Probably the most success I have ever had stuffing
cheese into chicken. I usually end up with a deep fryer full of burnt cheese
but not today!

Cilantro Roasted Chicken
I am a huge fan of cilantro, if you are not a cilantro fan, steer clear
of this recipe. It has cilantro in the marinade, under the skin, in the sauce and
garnished on top. It’s full of herb goodness and I love it! One of the best
roasted chickens I have made in a while, easy and quick no muss no fuss.

Rum glazed drumsticks
Fowl
I decided
that in order to make my life easier, this month should be something that I
cook often. And I can’t think of any other ingredients that I use more often
than chicken. We cook some kind of chicken at least two times per week. So this month is about killing two birds with
one stone, dinner and a blog post all in one. Today on the chopping block is
rum, sage and honey.
