Vegan rose petal ice-cream

Even though I am a believer in full fat heavy cream ice cream. I am usually trying out different vegan varieties. Especially in April since it the month dedicated to no meats.  I am not sure what exactly possessed me to use roses as the flavoring for this ice-cream but here we are.

Jamaican Style Mussels


Something Smells Fishy...


 It’s the last recipe of seafood month, and I decided to try some mussels. I was first introduced to mussels back in high school by my best friend Petra who loveeeesssss them! She and her mom always made a lovely looking pasta with tomato sauce and mussels.  This pot of mussels is no different. It’s steeped in a divinely garlicky coconut sauce with a hint of white wine and sweet pearl onions.

Pina Colada Mojito


Cool it down 



Home alone one Saturday I created this concoction. A hybrid of two drinks, pina colada ( my mother’s favorite) and my go to drink the mojito. It was a no-brainer that I had to figure out a way to incorporate the amazing cocomania coconut rum into something this month.  A few days after I purchased the bottle, two small but sweet pineapples were picked from the yard and the light bulb went off immediately.

Curry coconut seafood n dumplings


Something smells fishy...


This recipe has been in our family since 2007. There was a time where we were making this every Sunday. My cousin in NY looks forward to this dish every thanksgiving, it’s his favorite and for good reason. Who would not love a bowl of your favorite seafood simmered in a creamy curry coconut sauce? And it’s all thanks to a lunch my mother had at the Four Season’s hotel.

Shrimp Rundown



Something smells fishy...


Aka Shrimp in coconut sauce, not to be confused with coconut shrimp.  It is yet another delicious and hearty Jamaican seafood dish with a twist; as this recipe is traditionally prepared with Mackerel. Coconut milk is a magical ingredient that somehow makes ‘everyting nice’.  And this shrimp stew is no different. The veggies and seasoning really complement each other well. I don’t know if you can say something taste traditional, but this sauce really tastes like Jamaica. It embodies all the flavors of home, and the coconut just sets it off.

Pumpkin Coconut Leek soup


"Pumpkin Everythang”

Like clockwork  the day I decided to make a lovely pumpkin soup here comes the rain, perfect timing. I had originally wanted to make a pumpkin wonton soup. However when I got to the grocery store they were all out of wonton skins, and ‘aint’ no way I’m making that dough from scratch, so plan B. A few isles down I spotted some leeks and figured, they probably taste like onions or scallions, so they should pair well with pumpkin, not to mention some coconut milk.
