Sweet and Spicy Chicken burger


 Burger Showdown!



Can you believe that summer is almost over? It’s the last week and a half to the beginning of school and everyone is in a mad dash to get ready. What I think we should be doing is getting in those last BBQ’s, while basking in the non-existent morning traffic. Why are we in such a rush to get back to the hectic school term? The first step in enjoying the last few weeks is to indulge in this delicious chicken burger. It’s sweet, and spicy, filled with delicious pineapple and crispy bacon.

Grilled shrimp on pineapple chow


Something Smells Fishy...


A few weeks ago I was on facebook and I saw a friend post a pineapple in a plastic bag with some green ‘stuff’ on it, the tag read pineapple chow. I was like what’s that? A little bit of research led me to several Trinidadian sites detailing how to make the soaked or marinated pineapple. I thought it very interesting that they soak fruits in a marinade of garlic, pepper, salt and chadon beni. The next thought that crossed my mind was how awesome this would be with grilled shrimp….and that’s what I did.

Pina Colada Mojito


Cool it down 



Home alone one Saturday I created this concoction. A hybrid of two drinks, pina colada ( my mother’s favorite) and my go to drink the mojito. It was a no-brainer that I had to figure out a way to incorporate the amazing cocomania coconut rum into something this month.  A few days after I purchased the bottle, two small but sweet pineapples were picked from the yard and the light bulb went off immediately.

By now you all should know how much I love an upside down cupcake. I have tried blueberry and strawberry upside down cupcakes in the past. However the pineapple upside down is the most socially acceptable. Since I’m never one to follow rules and traditions I did the pineapple upside down my way.

Veggie fruit pops

This is my Spring time three for one special, because you are getting three recipes in this one post. I wanted to make something easy and healthy. So what better way to get your daily dose of vitamins and minerals by sucking on some yummy pops. Now you guys know, I show you what works and what does not, I don’t hide things. Two of these pops were truly a WIN however one was an epic FAIL. Well not a total fail, but I’ll tell you more as you read further.

Pineapple pickle sauce





Happy Independence Day!!!

I really can’t take total credit for this amazing idea. It was a collaboration between my good friend Nalla and me. In July I was talking to him about my recipes for August and saying I needed one more recipe idea to complete the month. It’s easy to come up with traditional Jamaican recipes and methods, but not as easy to come up with a twist on them.  Now Nalla gets all intellectual on me, and says “based on all the things you already have planned, I feel you need something that utilizes a fruit or veggie, why not make a pickle?” DING, LIGHTBULB!

So a few posts ago I attempted to recreate my childhood sky juice to no avail but I refused to accept the defeat. After all no summer is complete without an icy beverage to cool you down. While the watermelonade is refreshing, an icy slush of sugar and fruit is even more so.

Spicy Pineapple Bacon Jam

Does bacon have any limitations? Apparently not, who knew you could make a jam with bacon? It’s a secret that I found out on a BBC food program, about 6 years ago! I always wanted to try it, but I just never got around to it.
