Today we have another pumpkin soup, but this time it's smoked. When was the last time you smoked a pumpkin? if your answer is never, then I think its time we change that. Smoked pumpkin is so much better, adds a lovely complex flavor to the subtle sweet pumpkin.

Coconut Cream Truffle butter pumpkin soup
M...eat...less
It always happens that the day I decide to cook soup is a cold and
gloomy day. I had potato soup down to make but then I used the potatoes for
dinner the day before. My mother had a pumpkin and I found some truffle butter
in the refrigerator, a-las a recipe is born.

Foil roast curry conch with pumpkin and okra
"Something Smells Fishy"
This was a simple and easy dish. I only had to get one pot dirty, and
in all fairness if I didn’t use any curry powder, I wouldn’t have made a mess
of any pots at all. Seasoned conch, tossed with pumpkin, okra and spices wrapped
in foil and cooked until tender.

Crispy chicken stuffed with toasted pumpkin seed bacon jam
Pumpkin Everythang!\
Back at it again with another pumpkin month. I can’t even lie to you it
gets harder and harder every year to come up with 9 new pumpkin recipes. Its
year four, and I have decided that I have to get into using all the parts of
the pumpkin, skin, flesh and seeds in order to make it through. So, without
further gibberish on the struggles I deal with in recipe creation let’s get to
what your here for this bombtastic recipe.

Spicy pumpkin potato salad
Pumpkin Everythang!
Last May while in NY for mother’s day and a slew of
graduations, I made a roasted poblano pepper potato salad that was so good. It
was definitely in my top 5 potato salads ever made. Every time I make a potato salad it is always
a unique one with a different flavor and completely different ingredients.
Today I decided to bring back my roasted poblano pepper potato salad with sweet
roasted pumpkins added to the mix.

Pumpkin Chili Cheese Pasta
Pumpkin Everythang!
Have you ever had one of those days where you wanted to make a quick
and easy dinner in one pot? That was me the day I made this concoction. I had a
small pack of ground beef, some pumpkin, left over frozen blocks of cheese from
past recipes, a box of spaghetti and a dream that it would
all come together and be delicious.

Roasted Pumpkin and pepper cheese dip
Pumpkin Everythang!
This is the best thing you can have in your refrigerator when hungry
bites. A nice bag of pumpkin cheese dip to make sandwiches, eat on crackers,
carrot and celery sticks, I would even spread this on burgers…this would
actually be excellent on a burger. Just all in all a great dip that everyone
should have on hand.

Ital Pumpkin Rasta Pasta
Pumpkin Everythang!
What is rasta pasta? The general consensus is that it’s any pasta dish
which utilizes the colors of the Rastafarian flag, yellow , red and green. I
notice when you google rasta pasta, the results are filled with a whole bunch
of pasta recipes which contain meat. I have to admit I found it quite amusing,
since the true Rastafari is vegan. Some die hearted ones don’t even use heat to
cook their food, let alone top their pasta with grilled chicken. So I decided I
would stick to what I’m sure is the origin and make a vegan, Rasta pasta.

Pumpkin sesame seed hamburger bun
Pumpkin Everythang!
It’s another October and time again for pumpkins. This month get more challenging as the years
go by. So I have to get very creative with what I come up with. A few months
ago I made a delicious sweet potato onion hamburger bun. I decided to try my
luck with the same recipe with a few more modifications and some fresh pumpkin.

Cheesy Pumpkin Bake
M...eat...less
We have nice little farm where we grow cabbage, string beans, spinach
thyme scallion, peppers, tomatoes, sugar cane, avocado, and the list goes on.
At the present moment we have a huge pumpkin vine growing that has every intention
of taking over the garden. Every now and again when the pumpkins are ready, we
have more pumpkins than mouths to feed it. That’s how this recipe was born out
of a need to use the most perfect pumpkin ever.

Pumpkin Carrot Juice
“Pumpkin Everythang”
Thick, rich, creamy and sweet, the most refreshing
drink to serve with a filling dinner. This pumpkin carrot juice is a take on a
childhood favorite drink that I’m sure most Jamaicans will attest had an impact
on their childhood. The addition of pumpkin takes our favorite drink to a new
high.

Pumpkin Garlic Knots
Garlic knots are a staple at every pizzeria I’ve ever been to. They are
almost always delicious, warm, salty and garlicky. Sometimes the garlic can be
a little too harsh and sometimes they whole thing can be way too oily. So let’s
take it to the kitchen and what we get is a recipe for the best garlic knots
ever; sweet, salty garlicky, buttery ,everything that’s right about the world
comes full circle in one bite of these.

Pumpkin Pork Lasagna
“Pumpkin Everythang”
And the nominees for most comforting food are (drum roll
please) mac n cheese, fried chicken, soft baked chocolate chip cookies and none
other but lasagna. Who would win that battle? I can say that if this pumpkin
pork lasagna was in the running it would be a tight race. It’s loaded with
flavor and cheesy, meaty goodness.

Bacon wrapped Pumpkin stuffed chicken breast
“Pumpkin Everythang”
The moment I knew this recipe was good was when my cousin
(who hates pumpkin) grabbed one of these like a hot pocket and ate it with her
hands, no knife no fork. It’s a very
simple and easy dinner, great way to get the persons who don’t like pumpkin to
eat it.

Beef and rice stuffed pumpkin
“Pumpkin Everythang”
This is delicious beef seasoned rice baked in a sweet Jamaican pumpkin.
The most beautiful pumpkin I have ever made, stuffed with rice, beef, raisins
and so much flavor. It’s so easy and it looks so posh and sophisticated. This
is how everyone needs to serve rice on thanksgiving. It’s such a statement. And
who doesn’t love edible bowls?

Cinnamon Sugar Pumpkin Dots
“Pumpkin Everythang”
Yum, Yum, Yum
it’s like a little teeny tiny cinnamon sugar pumpkin doughnut. It’s crispy, it’s
crunchy it’s delicious. I was super lazy from making three pumpkin recipes back
to back and I needed a quick (and I stress the word QUICK) recipe that I could
film and photograph so I could leave the kitchen. This was the idea that popped
into my head. What quicker than frying? And what’s better than cinnamon sugar?

Crunchy Pumpkin vanilla bean French toast
“Pumpkin Everythang”
Syrup optional, the French toast that can stand on its own is here. It
packs loads of flavor and is perfectly sweet. The best way to enjoy pumpkin for
breakfast and a great way to trick your kids into eating pumpkin without the
slightest clue as to what’s really filling their bellies and delighting their taste
buds.

Pumpkin Carrot Soup
“Pumpkin Everythang”
Welcome to the third year of Octobers Pumpkin month. In 2013
you got the very delicious sophisticated and refined pumpkin leek soup,
followed by the rich, flavorful and hearty Jamaican pumpkin chicken soup in
2014. Today I have stepped it up a notch. The most delicious vegan soup you
will ever have! I mean layer, after
layer of flavor. One of the most delicious creamy style pumpkin soups I have
ever made inspired by the most delicious soup I ever had at a whole foods
market…did I say delicious enough?

Jell-O No-bake pumpkin cheesecake
“Pumpkin Everythang”
Say hello to yours and my new best friend. Despite the fact that I hate
cheesecake I wanted to make one with pumpkin but it had to be easy. I have been
seeing these jello no bake cheesecake boxes for a very long time on the supermarket shelves. So I figured I
would pop a can of pumpkin puree in it and make some pumpkin cheesecake bars. So
said, so done.

Roasted Pumpkin cranberry hash
“Pumpkin Everythang”
I’m not going to sugar coat it, this recipe arrived from sheer
desperation of something quick and easy for dinner. I was cooking some salmon
and ran out to the grocery store leaving my mother to start the rice. As I walked
back into the house she said we have no rice. I was not about to go back out
the door. All we had were a few 'fluxy' potatoes, flour and pumpkin. So our
choices were baked or mashed potatoes, boiled dumplings or baked pumpkin. So
baked pumpkin it was.
