Rotisserie revamp!
This month is all about trickery and foolery...(well not
really). Let’s be honest, sometimes or most of the time no one can be bothered
to brine and season and roast a whole chicken. God bless the day grocery stores
started selling rotisserie chickens. For the most part they are seasoned well
and taste pretty good. It an alternative we turn to many a Friday night when
the kfc drive through like is 60 cars deep. There are a few problems people
will have with these birds and the recipes this month will aim to solve.
The first issue is the left overs: After they hit the
refrigerator, store bough rotisserie chickens never generally can retain the
juiciness. 2 You generally don’t like
the way they taste on their own. 3 You may not necessarily want everyone to
know it’s a store-bought chicken so what to do?
Store bought rotisserie revamp 1: Chicken fajitas
The first recipe I have is extremely easy but very tasty. It
completely masks the fact that the chicken is store bought. I am a lover of Mexican
food so the first and easiest thing I could think to make was a fajita. If you
are a lover of Mexican food chances are you have almost everything already in
your refrigerator and pantry. The only thing this delicious fajita needed was
some sour cream and some cilantro. I sent my husband to the grocery store to
get those items and he came back empty handed. I am almost certain the grocery
store had cilantro, he just had no idea what he was looking for. So I made due
with what I had.
Ingredients Makes 2-4 fajita wraps (printable recipe)
1 chicken breast cut into slices
½ cup onion slices
½ cup red pepper slices
½ cup green pepper slices
1 teaspoon oil
¼ teaspoon cumin
2 pinch salt
Sweet and spicy fajita mayo
2 tablespoon mayo
1 tablespoon honey
3 pinches of salt
½ teaspoon onion powder
¼ teaspoon cumin
¼ teaspoon paprika
¼ teaspoon chili powder
¼ teaspoon black pepper
¼ teaspoon vinegar (optional for a little more kick)
2-4 soft shell tortillas
Shredded Lettuce (optional)
Shredded cabbage (optional)
Cilantro garnish
Instructions
- Combine all the ingredients for the sweet spicy mayo and set aside in the refrigerator
- Heat oil in a pan and sauté the onion and peppers on high heat until they begin to char
- Add the chicken, salt and cumin powder, stir until the chicken gets a little color as well remove from the heat and set aside
- Lightly grease another pan and toast the soft shell tortillas until golden and puffed up.
- Assemble your fajitas with the soft shells, lettuce chicken and peppers and topped with the sweet and spicy sauce
