Umami Bomb!
There is nothing more delicious than the perfect BLT. The perfect sandwich with its salty crispy bacon, crisp lettuce, pillow-soft bread, and tomatoes. In this recipe, the tomato has taken a new form and it has become this incredibly flavorful and rich tomato spread. Once you make your BLT sandwich with this spread, you will never go back.
You read the title right, 6 hours, low and slow, pulling out
all the juices and intensifying the flavors of the tomato. The garlic and thyme
marry so well with the tomato, its natural sweetness is intensified and enhanced
by the addition of sugar, blended smoothly with your favorite oil, you will never
want your jar of spread to end.
And don’t for a
minute think that the buck stops at sandwiches. it’s a great dip and my all-time
favorite use for this is to add to soups and stews for that burst of umami
Flava. It's also bomb mixed with heavy cream and parmesan for a quick creamy
pasta sauce. It's yummy in omelets, and on top of scrambled eggs. I’m telling
you, it will be the best 6 hours of cooking you have ever spent.
Ingredients (Printable recipe)
6 lb cherry or grape
tomatoes
2 tablespoon salt
½ cup white sugar
3 tablespoons
fresh thyme
4 tablespoon
minced garlic
½ cup olive oil
Directions
- preheat the oven to 250 degrees F
- Wash and dry all the tomatoes and place them into a baking dish
- slice approximately half of the tomatoes
- add salt, sugar, garlic, thyme, and ¼ cup of oil
- toss thoroughly and place in the oven for 3 hours
- after three hours toss, make sure no tomatoes are sticking to the pan, and return to the oven for another 3 hours
- remove from the oven and allow to completely cool
- The tomatoes would have reduced in size considerably as their flavors have concentrated
- pour the contents into a food processor along with additional ¼ cup olive oil and blend until smooth.
- place into a sealable container and store in the refrigerator for up to 2 months.
Greedy Tips:
- If you plan to use this as a flavor enhancer in soups, stews, and cream sauces I would recommend freezing for extended shelf life. Place the spread in ice trays and freeze, once frozen empty into a freezer bag and store in the freezer up to a year. Use each cube of frozen tomato spread as you would a cube of bouillon to enhance flavor.
