6 hour roasted tomato spread


Umami Bomb!

There is nothing more delicious than the perfect BLT. The perfect sandwich with its salty crispy bacon, crisp lettuce, pillow-soft bread, and tomatoes. In this recipe, the tomato has taken a new form and it has become this incredibly flavorful and rich tomato spread. Once you make your BLT sandwich with this spread, you will never go back.

Cilantro Grilled Chicken Sandwich


If perfection had a flavor...

It's the herb you either love or hate, the great cilantro. This recipe is very long overdue. I finally had a bunch of cilantro in my fridge. I managed to use it for this recipe before it all went bad. I have mentioned on this blog about the best-grilled chicken sandwich ever that I had on Prince street in New York. It was our spot after we did our nails at Marie Nails. I finally recreated it, and it is epic. If you don't like cilantro, I'm shocked that you are still reading, no need to continue.

Breakfast meatloaf sliders

How often do we eat beef for breakfast? Depending on where you live that may be a whole lot, but in my family, not very often. We do pork sausages, bacon and chicken. The only time we will do beef for breakfast is when we are having dinner left overs. I wanted to do a recipe that was not a typical beefy dinner recipe. This is basically a beef breakfast sausage seasoned as if it were a meatloaf. Paired with all the yummy things you would expect to see on a breakfast platter.

Bacon wrapped sardine sandwiches with spicy dill mayo

I took some inspiration from a simple sandwich my father likes to eat. Sardines from the can with slices of scotch bonnet pepper and onions with a little mayo and lettuce on hard dough bread. It’s a sandwich I’m sure most Jamaicans have encountered at some point or the other. I particularly love sardines, to be honest I’m a seafood type of gal. I wanted to kick up my father sandwich a notch by adding more flavor and textures. This sandwich is delicious and the crunch, salty and sweet flavors all balance very well.

It’s another October and time again for pumpkins.  This month get more challenging as the years go by. So I have to get very creative with what I come up with. A few months ago I made a delicious sweet potato onion hamburger bun. I decided to try my luck with the same recipe with a few more modifications and some fresh pumpkin.

Fried Avocado Sandwich

Have you ever fried avocado? Its not at all bad. I was totally expecting to hate it, but the sandwich was absolutely delicious. The salsa, crunchy avocado, and that mayo atop the toasted hot dog rolls, is amazingly delicious. This is a must try.

This is a classic Jamaican lunch. Almost every child has some memory of corned beef sandwich packed in their lunch kit. I love, love, love corned beef, even though I know it’s not good for me. We limit our corned beef consumption to maybe three times a year sometimes less. We always have a can of it on hand in the pantry but we rarely ever use it. Today I whipped out the can of corned beef and made a Jamaican Bully beef sandwich. Even though there may be some debate as to my method.

A few years ago my sister and I were both interns in Manhattan at different city departments. She was with NYC media, and me with the department of city planning.  It was amazing that our offices were within walking distance from each other because that meant daily lunch dates. We had Italian, so much Cuban, food trucks, Chinese, you name it we had it. After a while we realized that this daily lunch thing was wreaking havoc on our pockets so we decided to carry lunch and have it in the park. Before we opted out of the lunch restaurant hopping scene, We had our first Jibarito at a Puerto Rican restaurant named Sazon.

I was thinking about a chocolate chip cookie and ice-cream sandwich. But I got to thinking and there are soooooooooo many chocolate chip cookie ice-cream sandwiches out there. I’m borderline sick and tired of ice-cream between chocolate chip cookies.  Well, let me take that back, I will never be tired of chocolate chip cookies. So I went back to the drawing board, tried to think of a unique but easy to make cookie that I can use for my dessert sandwich. I also wanted a dessert that I’ve never seen anyone make before. It’s the new way to have an apple pie a la mode.

The best chicken sandwich I think I have ever had in my life is from a little bakery in soho NY. I can’t remember the name; it’s on Prince Street with a green storefront. They make the most epic cilantro grilled chicken sandwiches in this world. I have recreated it several times at home with smoked mozzarella, it’s just pure bliss. I was going to post that recipe to the blog however the universe was just against me.

It’s everyone’s childhood sandwich. Pb&j  is a staple in almost everyone’s homes. If your refrigerator is empty chances are beside those takeout box is a jar of peanut butter. I am the girl that eats it with a spoon as a quick snack. I adore peanut butter and jelly to the core, especially with my favorite guava jelly. So there was no way it would not make an appearance this month. But as you know I have to do something special with everything I make.

Candied bacon egg and cheese sandwich

The classic bacon egg and cheese, it’s that one sandwich that you almost can’t go wrong with. Bacon is perfect, eggs are divine and cheese even more so. Then the breads that they can grace are seemingly endless, croissants, bagels, white, wheat, rye, sourdough, coco bread, rolls, muffins, even doughnuts and cinnamon buns. Yes I have seen bacon egg and cheese sandwiched between two glazes cinnamon buns. Today’s post is not that extreme, but it most definitely is putting on a brand new pair of shoes on an old favorite.

Since this month is all about whatever I want to make, and since I had every intention of making some chicken sandwiches for dinner. It only made sense to record each step and measurements as I did it so everyone can share in this glorious meal.

Chocolate fig & bacon grilled cheese

Dark chocolate, fig, bacon, parmesan and jalapeno cheddar grilled cheese…Where do I start with this sandwich?  After the s’mores sandwich I felt like I wanted to test the waters with a salty/sweet chocolate sandwich. And for some reason my mind went to bacon. I have seen on the internet bacon dipped chocolate all over the place, so I knew right away that bacon and chocolate could potentially be heavenly. But adding cheese to the mix was a whole new frontier, and it is perfect bliss in your mouth.

Garlic Grilled Cheese sandwich





It’s the last day in September and the last post for Lunchables month. Cheese sandwiches, especially ham and cheese sandwiches are another lunch time favorite.  There is something to be said about two buttery crispy pieces of bread with gooey cheese in the center. Just for a little something extra I decided to 'grill' mine in my waffle maker. An interesting twist I think the kids would love.

And then there was tuna; the quintessential lunch time sandwich. I think we can all agree that someone died and left the tuna sandwich in charge and appointed the ham sandwich to be the substitute when tuna is MIA. As a child I sometimes hated getting this sandwich because it was so smelly, you always got the "eww tuna" from other kids.  It was a true love hate relationship because secretly loved the sandwich. This tuna sandwich will make anyone proud to tout this smelly lunch to work or school.

A whole lot of years ago, (my god we're old) when we were still in high school my sister took a French field trip to Saint Martin. I think it was probably the best field trip she has ever been on because she still raves about it to this day.That was the first time I heard about a most delicious sandwich called a Croque-Madame and monsieur. Essentially a French ham, egg and cheese sandwich, and who doesn't love a ham, egg and cheese sandwich?
