"Something Smells Fishy"


They always say when life gives you lemons make lemonade, but the saying assumes you have sugar and water. I have been MIA for what feels like the last 20 years from blogging. Life gave me a whole bag of lemons when my husband died four days after my last post, while I was 7 months pregnant. I was fresh out of sugar and water. Thank God for friends and family, who not only gave me sugar and water but made the lemonade for me and fed it to me. Fast forward four months later, Baby is born and healthy, I’m back to cooking and finally back to blogging. I have lost my biggest fan, but I’m still here by God’s grace. Next ill start back on video posts. Normally April would have been my month for vegan and vegetarian recipes, but I’m mixing it up and just finishing off the month with maybe 5 seafood recipes. The first being a super easy and very flavorful shrimp dish.

Summer time is fast approaching, and it is the season to grill. The next recipe up for everyone, is one of the most delicious corns ever. I finally got my hands on some fresh corn, husks and all. Took all my inspiration from the Mexican grilled corn ‘elote’ with a little added Jamaican flair.

Another summer staple; Welcome the cornbread. It doesn’t get any more summer than that. Cornbread is just an every occasion bread, it’s not even about summer; Christmas, thanksgiving, every BBQ, every cookout cornbread is there and it’s not going anywhere any time soon. Best thing to do is get rid of the Jiffy and Betty Crocker, save those for the lazy days home and pull out the big guns for BBQ’s this summer, try this recipe.

It’s time for some BBQ’s. This month it’s all about the best home-made side dishes for your picnics and BBQ’s. Chicken, ribs, hamburgers and hot dogs all need side dishes to make that summer plate complete.  I’m sure you’re going to get invited somewhere and you may need a “Wow” recipe. Or you’re the host and you want some epic food to go with the fun. In either case I’ve got you covered as usual. First up is a corn on the cob, but with a super delicious and interesting twist; Curry!

Jalapeno Sweet Corn Cakes




 Appetizing...


This month of recipes are inspired by a purchase I made over the Christmas holidays. My mother sister and I were in PriceSmart (Caribbean Costco) and I saw a 36 pc. appetizer serving set, it had 6 cute spoons, mini forks, shooters, small glass dishes and mini plates. I just had to have one. Immediately I wanted to get right into a month of appetizer recipes, however I was in the middle of “Greedy Girl Eats” and January was chocolate month. So without further ado I welcome February, my chance to use my cute little purchase from Christmas, First up, some yummy Jalapeno sweet corn cakes.
