Jamaican Curried Shrimp

Shrimping!!

I can't believe after all these years I never had a plain and straight curry shrimp recipe on the blog. Someone messaged me on Instagram asking for a curry shrimp recipe and I actually went to the blog looking for one and was shocked to realize, it's not there! So I made sure to change all that.

Jamaican Curry fish and bammy

"Something Smells Fishy"

I really enjoy cooking and eating fish. It’s no secret that escovitch fish is my all-time favorite. Brown stew and steam fish are not too far behind. But what about curry? We tend to curry lobster and shrimp more often than we do fish. And curry fish is just as delicious, if not more than. Because the fish meat can actually absorb all the juices better than the meat of the shrimp or lobster. So today its a delicious Jamaican pot of curry fish and bammy.

Jamaican Curry Cow foot and Beans

OFFAL

There is just something about this Jamaican dish that is so comforting. Some people love it brown stewed, but today we are making a curry. I know some of you may be reading this and thinking how does one eat a cow’s foot? It's easy once you have a pressure cooker and don’t mind thick, sticky gelatinous gravy, yum!

Foil roast curry conch with pumpkin and okra

"Something Smells Fishy"

This was a simple and easy dish. I only had to get one pot dirty, and in all fairness if I didn’t use any curry powder, I wouldn’t have made a mess of any pots at all. Seasoned conch, tossed with pumpkin, okra and spices wrapped in foil and cooked until tender.

Nutty Rice with cashews, peanuts and coconut

"Christmas is coming"

November brings another month of recipes that would be great for thanksgiving or Christmas dinner. I have quite a few goodies in store; ham, biscuits, potatoes, lasagna, chicken, maybe duck (I’m a little afraid of the medium rare cooking requirements of duck lol). A holiday table (at least one in Jamaica) would be incomplete without a rice dish, it’s the staple side of life. So first up in this month of holiday recipes, is the rice.

Smoked and Curried Oxtails

"Beefy"

Oxtails are a tried and true recipe beloved by all Jamaicans. It my brother’s favorite dinner meal. Over the years my methods of cooking oxtails have greatly evolved. I’ve eliminated soy sauce or browning and started naturally braised and browning the oxtail to get the best color and develop richer flavors. I choose not to mask the flavors by using water to stew it rather than wine or a broth. It always turns out delicious. But at the end of the day sometimes a great recipe can always stand to be a greater recipe. With that goal in mind over the last year I have experimenting with new ways to make oxtail even more flavorful than it already is.  I’ve made fried oxtail in a sweet sticky glaze, I’ve smoked it and I’ve curried it.

Savory curry oatmeal bowl with mushroom “bacon” and hash

M...eat...less

You will never look at oatmeal the same again. It does not have to be sweet, or have cinnamon, or be used in a granola. Your oatmeal bowl can be savory and curried. It actually works so very well as a savory dish I’m surprised people don’t do it more often. It would seem this grain has been put in a box and forced to stay there, time to let the beast loose.

Smoked Curry Conch

"Something Smells Fishy"

I have been wanting to cook conch/ lambi for a long time now. It’s something my husband eats all the time. If conch is on the menu he will be ordering it. The irony is he loves it so much and I never ever cook it. This is the first time I’m ever cooking conch for him to eat. He enjoyed this conch to the max a little time consuming to make but certainly worth every effort.

Curry coconut plantain and eggs

"JAMAICAN FLAVORS"

This February is all about Jamaican flavors. Most of the dishes I will cook are probably not very traditional but they embody the flavors of home. Coconuts, all spice, garlic, onion and more coconut. The first dish is something I made up in my hungry state in need of some breakfast.

Jamaican Curry Chicken

Fowl

Finally, after all this time, I’m adding a Jamaican curry chicken recipe to the blog. It is intensely rich and flavorful. If you don’t have the time to wait on goat to cook or if you don’t like goat, you can certainly make curry chicken in a shorter time.  One of our favorite go-to weekday dinners.

Pan roasted hen with curry shallot and sage pan sauce

Potluck

Its yummy time,  I am a huge fan of Cornish hen, game hens, quails and small birds in general. I think they are a lovely addition to the dinner rotation. I always try to cook the hens in different ways. This time is about to get curried, but curried with shallots and sage. This was a really good recipe I can’t even lie. It was the last meal I made before heading off to New York for two weeks.

Curry Fried Lobster

Something Smells Fishy...

I always have to include lobster in seafood month. Even though I dislike lobster, I’m doing two lobster recipes this month. This, the first of the two, is an experiment with a non-traditional way of cooking lobster. I hardly ever see persons deep fry lobster the same way we do shrimp or even crab. It tuned out pretty good, and that’s coming from a girl who hates lobster.

Greedy Girl Eats Homemade curry goat

"Greedy Girl Eats"

Finally I make my own curry goat! This past  month on Greedy girl eats was all about curried goat. In Jamaica our motto is out of many one people and for good reason. After slavery ended droves of Indians came to the country as indentured laborers. Thy did not leave behind their food. The curry as we know it today is a fusion of traditional Indian curry with Jamaican flavors. I visited 7 restaurants across the island and sampled their curry goat. Now the month ends with a home made version honing in the best of all I tasted.
