I don’t always make quick and easy recipes; I think there is beauty in taking the time to slowly develop flavors. But other times, you need dinner in 30 minutes or less, and that’s fine too. You should keep this recipe saved for the days when the ingredients are low. I went through my freezer, pantry and refrigerator grabbed a couple ingredients, and here we all are.

Roasted Pumpkin and pepper cheese dip

This is the best thing you can have in your refrigerator when hungry bites. A nice bag of pumpkin cheese dip to make sandwiches, eat on crackers, carrot and celery sticks, I would even spread this on burgers…this would actually be excellent on a burger. Just all in all a great dip that everyone should have on hand.

Sweet potato and pimento cheese pasta bake

 A few days ago I made a pimento cheese dip without realizing it. Or I made a cousin to the pimento cheese; I didn’t use pimento peppers, I used regular red bell peppers and I roasted them. Our church opened a small library and my mother asked me to make some refreshments. So I made a spinach cheese dip a roasted red pepper cheese dip and some ginger bbq chicken tenders. That roasted red pepper cheese dip (aka pimento cheese dip) has reincarnated itself into this baked pasta dish and it is fabulous.

Red Salmon Flatbread Pizza

I always wondered why people hate canned salmon. It’s my favorite kind of salmon, normally we have it sautéed with onions tomatoes and peppers for breakfast with fried dumplings, or for dinner over rice. It’s just so versatile and yummy, but I have heard from multiple persons that they find it disgusting. Do you know someone who feels the same way? This recipe was made for them, it will turn any person into a lover of canned salmon.

Cookout and BBQ Season!

A beautiful rainy morning (a work day I might add) I woke up and decided I’m not going to work. Nope, I am in the mood to stay home and cook something real hearty and comforting in the cold and gloomy weather. I knew I wanted something different, something I never cooked before or have never seen anyone else cook. I had purchased some pumpkin a few days before, as well as an interesting butternut squash pasta sauce, so I figured I could incorporate them in some way. Headed down to the kitchen with a pumpkin and a dream.
