Honey Jerk spiced ham

I find it interesting that we don’t jerk hams, well I’ll take that back. I have seen a few companies sell jerk seasoned ham. But in the grand scheme of holiday hams, jerk is not on the top of recipes you grab for. Today that may all change. I made a very simple jerk rub, quite similar in flavor and texture to the Walkers wood variety. I added my favorite honey to the mix and made a pretty good ham.

Mushrooms, garlic and wine anyone? This is almost one of the easiest thing I have cooked thus far. Chicken marsala is a dish I’ve always had at restaurants but never thought to cook. I generally try to cook recipes for the holidays that is easy to feed a crowd. This one fits the bill perfectly.

Jamaican Rice and peas

I am finally adding a Jamaican rice and peas recipe to the blog. Its flavorful the rice is perfectly cooked and very flavorful. It’s a staple in most households for Sunday dinner and if you eat lunch daily, it’s the side dish most served with every cooked lunch. Coconut milk, allspice, scallion’s, onions and scotch bonnet pepper are used to flavor this delicious side dish. Once you get the hang of if you are sure to make it all the time, especially for the rice lovers.

Salmon in a lemon dill coconut cream sauce

It’s shocking how far I’ve come in the development of my palate.  There was a time where I would never put rosemary or dill anything to my mouth. Even salmon I hated at one point. And now what do we have here? Salmon and dill? It’s a miracle, a extremely delicious creamy and flavorful miracle.
