Foil roast curry conch with pumpkin and okra

This was a simple and easy dish. I only had to get one pot dirty, and in all fairness if I didn’t use any curry powder, I wouldn’t have made a mess of any pots at all. Seasoned conch, tossed with pumpkin, okra and spices wrapped in foil and cooked until tender.

But because I know there is so much more under the sea, I try my best to produce recipes that contain all types of distinct species. So, to kick off March, we start with some mussels.

Mushrooms, garlic and wine anyone? This is almost one of the easiest thing I have cooked thus far. Chicken marsala is a dish I’ve always had at restaurants but never thought to cook. I generally try to cook recipes for the holidays that is easy to feed a crowd. This one fits the bill perfectly.

Hello September, this month will be filled with pasta dishes. The first on the chopping block is this very easy and very delicious shrimp pasta dish. It’s made special with sage, thyme and my absolute favorite sweet moscato; bartenura. You can literally have this cooked in 35 minutes.

Shrimp scampi is one of my favorites, it’s no secret. Ever since I saw Tyler Florence make it on Food network and realized it was so easy to make I was hooked. I have made it countless times over the last seven years. It’s the first video recipe I ever posted and the most popular recipe on my youtube channel with over 18,000 views. Most recently I began making it onto a one pot meal by adding cream and pasta. So I figured I would share the recipe with you all.

Stolen Mango Moscato

My sister and her boyfriend went to 689 in Kingston and returned raving about two things. A drink they had and oxtail lasagna. She knew I was in the middle of drink month and demanded I recreate the drink they had and loved. She made sure to ask the bartender what the drink consisted of, and the rest was left to me to figure out. So I have never tasted the original and I blindly attempted a copycat recipe of a drink I didn’t know the name of…turned out pretty good.

Watermelonade turned Sky juice turned Watermelonade


Cookout and BBQ Season!

Initially I had the idea to make a refreshing summer drink, by combining  watermelon and limeade.  However I decided to go even more refreshing and make a sky juice.

There are just some things you remember as a child that will never leave you. Back in the day at ‘little Belair’ before mom had a car; she would pick me up after teachers college and we would walk to the taxi stand and take a taxi home. Right in the middle of the park there was a little blue and white wooden stall where a man would sell sky juice, red and blue ones in  little plastic bags with a straw. He didn't have any fancy ice crushers, all he had was a huge block of ice and a little metal thing in his hand, he shaved some off  put it in the little bag and put whatever color syrup you wanted. My mother is not and has never been a fan of street side food, however once in a while she would get me a sky juice.

I hate salmon


A few months back I went on a pescaterian venture. The only form of animal protein i consumed was seafood. As a true island girl, I love all seafood with the exception of salmon and lobster (sigh, yes I said lobster, hate it!!!). For some reason the flavor of salmon is so strong and over powering I tend to eat very small pieces of it or none at all.

I am a firm believer in taking lunch to work from left overs. Sunday cooking is the best because you get at least two days of packed lunch. I'm such a left over lover, I will cook during the week after work, just so I have a packed lunch for the morning.

Shrimp Scampi like a Pro






First and foremost I have to give a shout out to Red Lobster for introducing me to shrimp scampi. It was here that I had my very first taste, one of my guilty pleasures. It’s no secret that their version is way too oily and salty, but its soooo yummy, who can resist? My goal was always to make a shrimp scampi that tasted just like theirs, minus the overdose of butter and hypertensive salt content.

Can’t cook without





There are just some things you can’t live without, can’t do without. Likewise there are some kitchen utensils you can cook without. You don’t even realize how deep this unnatural dependency is until your rummaging through a friends kitchen drawer fighting back tears and wondering how she survives without a mallet.
