This Jam came out of nowhere. I had no idea we had a blackcurrant tree. My mom came in the kitchen Friday morning asking me If I knew the Ribena tree was loaded. I was like, the Ribena who? I promptly took a stroll to the front yard with Lizzie to have a look and a taste. That bite was intense. Imagine the driest, sour, tartest cranberry you ever had, and times it by 100. That is what this tasted like, I was shook, but intrigued. I knew Saturday morning this had to become a jam.

Easy pineapple lime Jam
Brunch knows best
Jams are so amazingly versatile, you might think they are only meant
for crackers and bread. But they can really add a delicious element to so many
dishes. I’ve put jam on a pizza (which I’ll post a recipe of later) I’ve used
jams in BBQ sauces and its my go to ingredient for sweet and sour sauce. All
around its something I use often, so it makes sense that I would have a scratch
made pineapple jam recipe.

Dan-ish
Easy Bake!
This pastry is as ad-hoc as can be. Ugly little buggers, I really didn’t even
know what to call it. It’s not really a tart, not a croissant, it’s kind of like
a danish…get it dan-ish? I literally walked
into the kitchen grabbed the three ingredients and went for it. Cheese, jam and
puff pastry; three ingredients one would expect to be a winning combination.

Spicy Pineapple Bacon Jam

Does bacon
have any limitations? Apparently not, who knew you could make a jam with bacon?
It’s a secret that I found out on a BBC food program, about 6 years ago! I always
wanted to try it, but I just never got around to it.
