Cheese patty in a rosemary garlic crust

The month culminates with a delicious and simple patty, probably the easiest to prepare of all the patties this month. Not only was it the easiest it was the most delicious. Who said a patty has to have anything else in it but cheese? Oh the wonder that is this patty, by far my absolute favorite of the month.

It is a rare occurrence when pork makes its way into a patty. And I don’t mean bacon, I mean pork; meaty and juicy, the other white meat. For this recipe I wanted to make a jerk pork patty but after thinking about it, I opted for low and slow. And a pulled pork patty is born.

As a Jamaican I can say I know a good patty. And many persons would agree we eat patties a great deal. However we hardly ever make them. I venture to say most Jamaicans have never and will never make a patty. But I’m sure you would be hard pressed to find one that has never eaten one. There are a few places that sell the best patties.

Spicy Bacon & cheddar beef patty

Ladies and gentlemen, you’ve got beef! My boyfriend is solely responsible for the creation of this patty. About a week ago he went to Mothers (not a typo, Mothers is a fast food joint in Jamaica) and came back raving about how delicious their bacon cheese and beef patty was. A small light bulb went off in my head.  I was already making a beef patty that same weekend, why not make a variation by adding some bacon and cheese. And not just any cheese but fancy cheese.

The second installment of seafood patty week has arrived. The crustacean we all love, or love to hate. I decided to make a shrimp patty, because the poor excuse for shrimp patties being served around Jamaica need to be taught a few lessons.

Coconut fish patty in a saffron crust

So this week I’m venturing into the seafood patty scene.  This is a coconut fish patty in a flaky saffron crust. The crust this week is much easier to prepare. I made my crust the day before kept everything as cold as possible.  The crust came out so flaky and delicious and the filling basically tasted like Jamaica.

Patty number two and it’s all about the veggies. Since I already had the callaloo for the crust, why not use it as a filling as well? This patty combines veggies with some delicious cheese for a very vegetarian friendly lunch and snack.

Just leave it to someone on instagram to inspire a month of recipes. Inspiration comes in many forms and by chance I came across @mrcuttersnyc image of a restaurant kitchen work table lined off with what seemed like hundreds of patties in the making. I was so intrigued, intrigued enough to come up with eight patty recipes, four weeks of awesomeness. And this first one is super Jamaican!

Mini elephant ears

You all can thank my boyfriend once again for this recipe. The man absolutely loves elephant ears from Sugar and spice bakery. So I decided that since I was already subjecting myself to a month of baking I might as well make something he loves. These cinnamon sugar elephant ears are by far the easiest recipe for this month. The flaky pastry pairs lovely with the cinnamon and sugar, and it will take you less than 30 minutes to make including bake time.

Not your average Churros

This post is a lesson in determination. I have always wanted to make churros. From the first time I ever had them at Costco, it was love at first bite. The crunchy sweet cinnamon sticks with that super soft inside. Churros are actually very simple to make and the ingredient list has a grand total of 5 ingredients. All you need is the dough, hot oil and you’re good to go.....I know they are not baked, but they are easy

Dan-ish

This pastry is as ad-hoc as can be. Ugly little buggers, I really didn’t even know what to call it. It’s not really a tart, not a croissant, it’s kind of like a danish…get it dan-ish?  I literally walked into the kitchen grabbed the three ingredients and went for it. Cheese, jam and puff pastry; three ingredients one would expect to be a winning combination.

Garlic and herb egg puffs



Appetizing...


This recipe just screams weekend brunch. These garlic herb scrambled eggs in a flaky puff pastry shell are sure to open appetites. The garlic and herb compound butter gives the scrambled eggs more pizazz, it’s not every day someone has garlic eggs. I really love when a dish looks complicated but ends up being extremely easy, and this appetizer is one of those dishes.

MY PEOPLE MY PEOPLE!!! I just experienced a Korean sweet pancake! To say its just delicious is doing this glorious pancake a grave disservice. When I decided to do September as pancake month, I tried to find unique pancake recipes from around the world. I stumbled upon this korean street food from a Maangchi video, and was immediately intrigued. For Korean cuisine I always watch Maangchi, so i knew that pancake had to be on my list, after all she taught me how to make Korean fried chicken, and its boss!
