Croque-Madame...No runny eggs here.. Sue me!

A whole lot of years ago, (my god we're old) when we were still in high school my sister took a French field trip to Saint Martin. I think it was probably the best field trip she has ever been on because she still raves about it to this day.That was the first time I heard about a most delicious sandwich called a Croque-Madame and monsieur. Essentially a French ham, egg and cheese sandwich, and who doesn't love a ham, egg and cheese sandwich?

Jerk sausage pinwheels

Can I tell you how I made my own smoked jerk sausage? It was by far the most tedious thing I’ve ever done.  I chopped the meat; ground it seasoned, stuffed it into casings then slowly hot smoked them on the grill for three hours. They didn’t come out to bad for a first timer. Now I’m using the sausages I make to make some yummy jerk sausage pinwheels. You are free to use any store bought sausage you like. I will be sharing my sausage tutorial in the coming weeks as a curious class... but on to the pinwheels.

Mango Tart

There are those few persons who rather a sweet bite for breakfast, Danish, donuts, tarts , muffins and all the sorts.  I’m not one of those persons, for me breakfast is bacon and eggs. I was thinking about baking some scones for this post and as usual Instagram reared its beautiful head and had me double thinking all my plans. Check out this pic by @simplymanis the moment I saw this image I decided I wanted to try to make it. My mini tarts are no way as pretty as hers, but a girl can dream.

Ackee and saltfish with fried dumplings

There is no way I could have done a month of breakfast recipes and not ventured into ackee and salt fish territory; After all its Jamaica’s national dish and for good reason. In our household it is prepared for breakfast once a week, either Friday or Saturday mornings. I have a cousin who is so in love with ackee she could eat it every day. However I feel like ackee and fried dumpling is a special breakfast, and having it every week makes it not as special. So in an attempt to not take this meal for granted, most times when it is prepared I don’t eat it, I have an omelet instead and wait about three weeks so when I do have it, its extra delicious.

Callaloo and Zucchini Frittata

No bacon, no sausage, no ham and this frittata is still turnt! After making vegetable lasagna with grilled zucchini last month, I realized how delicious zucchini was. In our family it’s a vegetable that we don’t use at all! While eggplant may rear its ugly head once in a while, zucchini does not exist. Now callaloo on the other hand is a vegetable we serve for breakfast lunch and dinner. So I decided for this frittata to ditch the cured meats and go for a healthy fresh combination of these delicious veggies. You will not miss the meat one bit.

Raisin Bran Muffin with Cinnamon Streusel

In the summer of 2013 I experienced a muffin that was close to the best I’ve ever had; A raisin bran muffin in San Diego at La Costa resort. Normally I’m not a muffin kind-a-girl I'll normally choose a croissant over a muffin any day,  but for whatever reason I was in the mood for a muffin, fruit, bacon and a boiled egg that morning. The bran muffin totally blew me away with how good it was, not too sweet, juicy flavorful raisins and a yummy crunchy cinnamon topping. This is what I tried to recreate for this post, and it’s a winner!

Mothers day is around the corner, and I'm sure your mom would like to have breakfast in bed. This Friday I am here serving up yet another delicious breakfast. In conforming with the stuffed theme of the week (Tuesday I posted salmon filled corn muffins), on the menu today is a waffle stuffed with a yummy sausage apple hash.

I think there is something nice about fillings. Twinkies, cupcakes, doughnuts, hot pockets, tarts, egg rolls, all these foods have some form of wrapper with a filling inside. For the most part, its rare that a muffin gets a filling, and even more rare to see it filled with fish. I have made a chicken pot cornbread muffin before, but that was a mixed batter and not a filling, so I decided with this recipe that I wanted the salmon to be a surprise inside. Hungry Man Scramble

I take my eggs very seriously; as a matter of fact I take breakfast very seriously. It’s surprising to me that I took this long to dedicate a month of blogging solely to breakfast foods.  This post is about the most filling delicious and healthy scrambled egg platter you will ever eat. It’s so good in fact that after a serving of this breakfast, you would have cast a very powerful spell on your significant other, enough so that thoughts of proposals will begin to swarm in the minds.

 So be warned, if it is your intent to have a fling, no strings attached, non-committed, no marriage relationship, DO NOT COOK THE FOOD ON THIS BLOG AND SERVE IT TO SAID PERSON!  But if you’re trying to lock it down real quick…stick around.
