Baked Penne a la Vodka


I love Pasta


The first time I had penne a la vodka was about 7 years ago at my Friend Petras wedding. It was an intimate wedding, after the ceremony we all went to Crab Shanty in city island NY for dinner. She encouraged me to get the penne a la vodka with shrimp raving about how delicious it was; she was so right. It was super creamy with really rich flavors and juicy shrimp. Since I have already made two shrimp pasta dishes this month I decided to make this one meatless. In addition, I decided to bake it, it’s the one thing I have never seen done so I did it.

Curry shrimp with stelline pasta

Curry, coconut milk, spicy grilled shrimp with a hint of ginger.  You can’t go wrong with this dish that can take on two personalities. If you love cold pasta salads this dish can transform into a cold salad. And if you want a warm hearty pasta dish it can be that as well. This is your Friday two for one special.

Creamy sausage pasta

In all fairness its pasta month and last Friday I didn’t give you a pasta recipe. I gave you half of the equation, which was that delicious and most perfect marinara sauce; perfect in every way, especially for the vegetarians. Today we are going to turn that sauce into a meaty sausage sauce and toss it with some penne. It probably the simplest pasta recipe I have done thus far, especially since I already had the marinara set aside since last Friday. If you want to use a pre-made marinara sauce, be my guest. But I do implore you to make the mushroom marinara sauce, and if you don’t like mushrooms this sauce will make you like them.

It never fails to amaze me how easy, quick and delicious a homemade marinara sauce is. This one is bursting with all the flavor full fresh and dried herbs. Since this month is all about pasta one should absolutely know how to make a red sauce to accompany it. This one is made extra special with my favorite fungus the mushroom.

Louisiana chicken n pasta

Crispy Cajun fried chicken breast atop creamy Cajun spiced bowtie pasta. This dish is inspired by cheesecake factories “Louisiana chicken n pasta” I love the combination of crispy and creamy. I would bet money that it’s one of cheese cake factories bestselling dishes. This homemade version was a real crowd favorite, everyone loved it, not a single drop of left overs. I can assure you that will be the case if you try it too.

BBQ Chicken Macaroni and Cheese

This is a simple and easy recipe I make all the time at home. Especially if I want a quick one pot go to meal. It’s creamy cheesy slightly sweet from the BBQ sauce and has bits of chicken, onion and peppers all thorough.  No way could pasta month go by without me sharing my little secret BBQ chicken macaroni and cheese.

Roasted redpepper ricotta ravioli with lavender cream

There had to be ravioli somewhere in pasta month. No if's, and's or but's! And it It gets better no animals were technically harmed in the making of this dish a.k.a vegetarian friendly. It’s a rather simple dinner with not so simple flavor combinations. Ravioli filled with, sweet ricotta spinach shallots and roasted red peppers. And a sauce made from lavender leaves…yes lavender
