 It’s the last recipe of seafood month, and I decided to try some mussels. I was first introduced to mussels back in high school by my best friend Petra who loveeeesssss them! She and her mom always made a lovely looking pasta with tomato sauce and mussels.  This pot of mussels is no different. It’s steeped in a divinely garlicky coconut sauce with a hint of white wine and sweet pearl onions.

Do you have any jerk sauce left over from your salmon? Well here is the best use for it. A delicious Jerk lobster pasta, which is sure to please any lobster lover in your life. I don’t eat lobster, not allergic, just not a fan of the flavor, however I have received nothing but rave reviews on this dish which happened purely by accident.

I find it so funny how I am constantly cooking salmon, the fish that I hated not so long ago. I am constantly on a quest to cook it in different ways, each being better than the last. Not to sound like a broken record yet again, but this is the best salmon I’ve ever made; even better than the honey mustard herb salmon. And if you have ever had the honey mustard herb broiled salmon then you know this is the salmon of every salmon lover’s dream!

This is one of those recipes that I always eat at restaurants and never ever make at home. I always enjoy restaurant calamari. It’s the one thing that a restaurant almost never spoils, at least I personally can’t remember having bad calamari from any restaurant (thankfully).  This recipe is flavorful and well-seasoned.  The squid rings are tender and the dipping sauce, toasted sesame seeds and scallion all come together for one delicious bite.

This is my boyfriend’s absolute favorite way to eat shrimp. I can’t tell you how many times I have had to make this for him. I decided it was high time I post this recipe to the blog. It’s super crunchy and flavorful. The tartar sauce is so very easy to prepare and uses ingredients you probably already have in your refrigerator.

A few weeks ago I was on facebook and I saw a friend post a pineapple in a plastic bag with some green ‘stuff’ on it, the tag read pineapple chow. I was like what’s that? A little bit of research led me to several Trinidadian sites detailing how to make the soaked or marinated pineapple. I thought it very interesting that they soak fruits in a marinade of garlic, pepper, salt and chadon beni. The next thought that crossed my mind was how awesome this would be with grilled shrimp….and that’s what I did.

Shrimp scampi is one of my favorites, it’s no secret. Ever since I saw Tyler Florence make it on Food network and realized it was so easy to make I was hooked. I have made it countless times over the last seven years. It’s the first video recipe I ever posted and the most popular recipe on my youtube channel with over 18,000 views. Most recently I began making it onto a one pot meal by adding cream and pasta. So I figured I would share the recipe with you all.

For the past 7 days I have been working with Best Dressed chicken as a guest blogger taking over their social media and posting several of my chicken dishes as ideas for what to cook for the upcoming festivities. The 7 days of chicken recipe culminates with this dish. Roasted chicken breast stuffed with daikon ricotta and shallots topped with a creamy mushroom sauce.

The first time I had jerk fish was on the eve of my 29^th birthday. We went to Oswald’s at alligator pond and as usual I ordered my escovitch fish. We were about to order another when someone suggested I try their Jerk fish. It was spectacular and I have never ordered anything else from them since that day.

Don't let the name fool you, this is not a sweet fishy tea, its just a soup! I always imagined fish tea came out of a need to use a left over commodity. Just like bread pudding reclaims slate bread, and chicken bones create stock. I feel that fish heads and other parts were used to make a soup so that they would not be “wasted” but that’s just my theory. There has never been a thing wrong with turning trash to treasure. And this soup is quite a treasure.
