Crunchy Cinnamon Toast or Cinnamon toast crunch?

 Belly Full on a Budget

I am wondering why I have not been using dulce de leche to make my French toast all this time. It is so good! This toast was beyond delicious. No cinnamon toast crunch cereal was harmed in the making of this dish. However, it hits all the right notes.

Cilantro Grilled Chicken Sandwich

If perfection had a flavor...

It's the herb you either love or hate, the great cilantro. This recipe is very long overdue. I finally had a bunch of cilantro in my fridge. I managed to use it for this recipe before it all went bad. I have mentioned on this blog about the best-grilled chicken sandwich ever that I had on Prince street in New York. It was our spot after we did our nails at Marie Nails. I finally recreated it, and it is epic. If you don't like cilantro, I'm shocked that you are still reading, no need to continue.

Nutella filled banana bread muffins, with Pistachio streusel.

"Quarantine Cooking"

My sister said, what is it about being stuck at home that makes you want to bake? My answer to that was I do not know. But I for one am in the mood to just cook and bake up a storm. I am even contemplating making some doughnuts and bagels. This banana bread is a quick tweak to my existing chocolate chip banana bread recipe. If you got that recipe down pact, then all you must do is top it with some streusel and you are good to go.

Honey Mustard Chicken

POTLUCK...again

I can't believe it took me this long to post this recipe. This was a delicious weeknight dinner that I made and snapped a few pics of then posted to Instagram, saying the recipe would follow. And here we are, almost a month later, but this honey mustard recipe is finally here.

Garlic Grilled Salmon with parsley butter

"We be Grillin"

Gone are the days when I detest Salmon. I remember the beginning of this blogging journey I did not eat salmon at all. In-fact my first salmon recipe post was called “I hate salmon”. Since then, my cooking life has been filled with making salmon all kinds of ways, from burgers, to pizza. This recipe is simply grilled and coated in a herb sauce.

Coconut Shrimp

"Something Smells Fishy"

This is my sisters favorite dish. Actually, let me take that back, this was my sisters favorite dish before she suddenly developed an allergic reaction to shrimp in her 20’s. After years of sampling coconut shrimp from every single restaurant we have ever been to that sells it, her heart sinks because she can no longer eat it. She was indeed the coconut shrimp queen. This post is in dedication to her former self, I pray she does not suddenly develop allergies to lobster, because then she would really be devastated.

Savory Bread Pudding

M...eat...less

Recipes have a funny way of transforming themselves. I had every intention of making some savory bread pudding waffles with a pepper jelly glaze ( which was really some store bought pepper jelly melted in the microwave…soooo good) I went to my mother’s house because I did not take the waffle sandwich maker when I moved. We turned that kitchen upside down and we have yet to find the waffle iron inserts. Needless to say, I was highly annoyed. Because bread pudding really need to cook thoroughly, I didn’t think the sandwich press inserts could do the job as well as the waffle inserts. However because I had no other choice but to make it work, I tried cooking this recipe three ways.

Cocoa Chipotle baby back ribs

"Feast of Saint Valentine"

I’m finally back from my long hiatus with a new last name. It was an interesting experience to not have the weight of two blog posts per week resting on my shoulders. Instead I had to deal with caterers, decor, wedding dresses, and all that comes with planning your own wedding. The honeymoon certainly made up for all the hard work. So now that all the excitement has passed, I’m in a new house with a new kitchen ready to bet back to greedy girl cooking. In case you forgot its chocolate month and the first recipe up is a chocolate chipotle baby back rib.

Pumpkin sesame seed hamburger bun

Pumpkin Everythang!

It’s another October and time again for pumpkins.  This month get more challenging as the years go by. So I have to get very creative with what I come up with. A few months ago I made a delicious sweet potato onion hamburger bun. I decided to try my luck with the same recipe with a few more modifications and some fresh pumpkin.

Boneless cheese stuffed fried drumsticks

Potluck

Following no rules this month, cooking whatever craziness comes to mind and boneless drumsticks stuffed with cheese is exactly what I was in the mood for. I am always on a quest to improve my fried chicken skills and this one is double dipped and stuffed with onions, peperjack, and parmesan cheese.

Redpepper cornbread

Summa Summa Summa time!

Another summer staple; Welcome the cornbread. It doesn’t get any more summer than that. Cornbread is just an every occasion bread, it’s not even about summer; Christmas, thanksgiving, every BBQ, every cookout cornbread is there and it’s not going anywhere any time soon. Best thing to do is get rid of the Jiffy and Betty Crocker, save those for the lazy days home and pull out the big guns for BBQ’s this summer, try this recipe.

Parmesan Garlic Fries

Summa Summa Summa time!

How many times have you had parmesan garlic fries at a restaurant and thought “I wish I could make them at home”. Well my fellow foodies I have cracked the parmesan garlic fries code ‘fa realz!’ And they taste EXACTLY like the ones we know and love at all these fabulous restaurants. The secret is in the parmesan, keep reading!

Pepperoni Pizza Omelette

The best way to eat an egg!

Pizza for breakfast is almost as common as having an omelette. Today we combine the two, a delicious peperoni pizza omelette filled with mozzarella cheese. Serve this with some toast and you will truly feel as though you’re eating a slice from your favorite pizza shop.

Mushroom Omelette

The best way to eat an egg!

There could not be an omelette month without this recipe. If there was an omlette kingdom the mushroom omelette would most definitely rule over the vegetarian court. The ever so versatile mushroom has a subtle flavor (depending on the variety) is meaty, filling and healthy to boot. I may have rendered the nutritional value null and void with a creamy parmesan filled mushroom sauce, but it’s worth every calorie.

Fried Calamari

Something Smells Fishy...

This is one of those recipes that I always eat at restaurants and never ever make at home. I always enjoy restaurant calamari. It’s the one thing that a restaurant almost never spoils, at least I personally can’t remember having bad calamari from any restaurant (thankfully).  This recipe is flavorful and well-seasoned.  The squid rings are tender and the dipping sauce, toasted sesame seeds and scallion all come together for one delicious bite.

Creamy shrimp scampi pasta

Something Smells Fishy...

Shrimp scampi is one of my favorites, it’s no secret. Ever since I saw Tyler Florence make it on Food network and realized it was so easy to make I was hooked. I have made it countless times over the last seven years. It’s the first video recipe I ever posted and the most popular recipe on my youtube channel with over 18,000 views. Most recently I began making it onto a one pot meal by adding cream and pasta. So I figured I would share the recipe with you all.

Sorrel Glazed Ham

"Christmas is coming"

In Jamaica, Christmas is the most loved holiday. It’s a time where we celebrate Christ and family. Once the Poinsettias start to turn red, you know it’s on and popping! With that the fruits are soaking, the sorrel pods are being harvested and everyone is starting to flesh out their Christmas plans. This ham needs to be at the top of list. It’s so moist and delicious and the sorrel and ginger sauce add the most perfect flavor to every bite.

Braised Lamb Shanks with Fennel

 "Christmas is coming"

As Jamaicans we tend not to venture too much into lamb but are very comfortable with their cousin goat. Goat is a prized meat here especially the male ram goat which imparts the most unique flavor to Manish water (goat soup) and to curries. I decided to stray a bit away from tradition for this Christmas recipe and do a succulent braised lamb shank. It has fennel, shallots and herbs cooked in wine and broth, so delicious!

Ginger Peach Roll-ups

 Easy Bake!

This week has been super busy for me. I’m on a mini one week vacation and cooking in a new kitchen. That’s even how I came up with the easy bake theme for this month. Because I knew the last few weeks of the month I wouldn’t have more than 30 minutes to prepare any one dish.  Summer is known for all the yummy fresh peaches available. If you’re a fan of peaches and ginger you may appreciate this flavor combination.

Banana Orange cupcakes

Cake Cake Cake...

To be honest, this isn’t really a cupcake, it’s kind-of a banana bread/muffin hybrid. I was all set to make orange cakes in the orange cups with orange butter cream, but as luck would have it, the bananas I had stored away in the refrigerator were ready to be baked. So instead of baking two things I decided to combine the banana bread with my orange cupcake idea to create banana bread infused with orange flavor, turned out pretty nice.
