Pomegranate and ginger Roasted chicken

Don’t you guys love how I am expanding my chicken database on the blog. Not too long ago I was looking real shabby when it came on to chicken and now I’m really starting to build up a mass of recipes, Yay me. In any case this chicken dish is quite flavorful, it could be the browned butter, it could be the pomegranates, the ginger, who knows. Everything came together quite nicely.

Saucy Non-meatballs

Almost everyone loves meatballs. Small convenient bite sized morsels that you can just pop in your mouth and enjoy. In my family it’s usually a challenge to make vegetarian dishes that my mother can enjoy while we enjoy our meat. Last year I decided to try my hand at a veggie meatball, since we were having beef meatballs for dinner. Turns out her vegetarian non-meatballs tasted way better than ours, and since then I have been working on the perfect recipe.

Sorrel Glazed Ham

In Jamaica, Christmas is the most loved holiday. It’s a time where we celebrate Christ and family. Once the Poinsettias start to turn red, you know it’s on and popping! With that the fruits are soaking, the sorrel pods are being harvested and everyone is starting to flesh out their Christmas plans. This ham needs to be at the top of list. It’s so moist and delicious and the sorrel and ginger sauce add the most perfect flavor to every bite.

Asian turkey stuffed squash

No one told me that during gourd season there were so many different varieties in the grocery store. Usually I’m in Jamaica during this time and we have one pumpkin, green skinned yellow flesh nothing new. However I waltz into stop and shop expecting to pick up a normal slice and the only thing I recognized in the pile was some butternut squash. I mean they had dimples, bumps, weird curves, some were purple, and they truly looked like something out of this world. Even though most are bitter and inedible, all I kept thinking was how hard they must be to peel. I picked up my two squashed and headed home to stuff them.

Ginger Peach Roll-ups

This week has been super busy for me. I’m on a mini one week vacation and cooking in a new kitchen. That’s even how I came up with the easy bake theme for this month. Because I knew the last few weeks of the month I wouldn’t have more than 30 minutes to prepare any one dish.  Summer is known for all the yummy fresh peaches available. If you’re a fan of peaches and ginger you may appreciate this flavor combination.

Cherry Ginger spritz


Cool it down


The best thing about summer (next to the good weather) is the abundance of fruits. Not everyone drinks alcohol, so it’s only fair that a few of the drinks this month are virgins.  I will say that when I opened the refrigerator and saw a box of cherries I was quite happy.  This drink is easier than ever, and very tasty. It’s the perfect complement to a hotdog and potato salad.

Tamarind glazed Wings

My sister hates the grocery store, to the point where she waits in the car while I go in and shop. But what she does not understand is that the best ideas come to you while looking for something completely different. Originally I had every intention of making ginger glazed chicken wings.  I was walking towards the produce isle all the lights dimmed and a spotlight hit the box of tamarinds and a thought came to my head. I questioned if I should change my recipe idea to include a tamarind glaze, but threw out the idea finished shopping and went on my merry way home. Once home I was plagued with the what ifs and shoulda-coulda-woulda’s.  The very next day I went on instagram and saw @fatboo making tamarind juice, I took it as a sign, went straight back to the store and did what I should have done the day before.

Christmas Candy Crush Cookies

Here I am yet again with another baked item despite the fact that I hate to bake. This cookie dough really did stress me out quite a bit, but it turned out great in the end.  I could never have done Christmas recipes without at least attempting a gingerbread cookie. These babies are actually a cross between a short bread and ginger bread cookie. Very high fat content makes it nice and crumbly, with the sweetness and ginger undertones.

Pumpkin Panna Cotta with ginger Caramel

We end Pumpkin month with a final dessert

While brainstorming dessert ideas for pumpkin month I saw another blogger make a coconut panna cotta it looked like a dish of queso fresco. I thought what’s a Panna cotta? GOOGLE!!
It’s a word I have heard before, but I was not really one hundred percent sure what it was. At first sight I thought it was a flan, but after more reading realized it’s the flans Italian cousin that uses no eggs. Its basically a pudding served cold.
