I can't believe I made butter! Every time I make whip cream, a little voice says, "Not too much. Don't want it to become butter," but for some reason, I never took it literally. It's like I didn't believe that if I kept on whipping, it would become butter even though I knew that that is how they make butter. This time I kept on beating, but not before smoking the cream.

Coconut Cream Truffle butter pumpkin soup

It always happens that the day I decide to cook soup is a cold and
gloomy day. I had potato soup down to make but then I used the potatoes for
dinner the day before. My mother had a pumpkin and I found some truffle butter
in the refrigerator, a-las a recipe is born.

Strawberry Cheesecake Ice-cream

This ice-cream will be the hit will all the cheesecake lovers out there. Unfortunately I am not one of them. I could never wrap my head around eating a large chunk of cheese and butter. I generally peel off the crust and eat that with a little strawberry topping. However as a cheesecake hater I will say this ice-cream is quite good. The consensus from everyone who has tasted it is that it tastes exactly like cheesecake. I think it taste better.

Cocoa & hazelnut compound butter

This has got to be one of the best butters I have ever made. Last year I
went on a compound butter spree. The smell
alone is just beyond awesome. I purchased that hazelnut flavoring a while back
to use in home-made hot chocolates and totally forgot about it. While rummaging
the cupboards to come up with this recipe I spotted it in the back and a light
bulb went off.

go with the biscuits but not just any biscuits. The easiest biscuits you will
ever make in your life. None other than cream biscuits, literally three
ingredients needed for the most tender, flakey and soft puffs of love. Now add
some garlic and rosemary to the mix and you have got a serious addiction on
your hands.

Ginger Peach Roll-ups
This week has been super busy for me. I’m on a mini one week

Apple Apple-pie
Easy Bake!
One thing I can appreciate about this recipe is its perceived level of difficulty. Once you serve this people will be wondering how on earth did you make it. Little would they know that the dough is store bought and there are only 6 other ingredients needed in addition to the dough. I will admit it’s not a simple as the pear oatmeal crumble, but it’s still pretty easy. Anyone can make this.

This recipe just screams weekend brunch. These garlic herb scrambled
eggs in a flaky puff pastry shell are sure to open appetites. The garlic and
herb compound butter gives the scrambled eggs more pizazz, it’s not every day
someone has garlic eggs. I really love when a dish looks complicated but ends
up being extremely easy, and this appetizer is one of those dishes.

Smashed potato
"Christmas is coming"
I love instagram, you get so many ideas from this lovely app
full of pictures posted by absolute strangers who you pretty much have accepted
into your social media family. You see, I was all set to make my garlic roasted
Irish potatoes, the same potatoes I make every Christmas and most sit down
dinners. Its quick, easy and yummy. Then in scrolling the feeds I see
hassleback potatoes and quickly the menu changed. This greedy girl was all set
to make her own version of hasslebacks (another item on my cooking bucket
list yet to be crossed off) Then in scrolling the feeds (again) I see smashed potatoes,
here is where the internal struggle began, I’ve seen smashed potatoes done a
few times on food network, but it never really grabbed me, and the hassleback
thing I have been wanting to do for so long.

Pumpkin gnocchi with white wine cream cheese sauce

I’ve always wanted to make gnocchi. In my early days of
cooking, when I was mostly a spectator (that is watching food network) I
decided to try these little Italian dumplings, however I purchased the prepackaged ones in the pasta
section and needless to say it was not good. It deterred me from ever trying or
attempting to make gnocchi again. That was years ago, and I know better now. Its
always better to make your own than to do store bought if you can. So one fateful
jet blue flight from Kingston to JFK about two months ago, I was watching food
network on my little mini screen. I saw a really quick video with Mario Batali
and Mark Bittman making gnocchi and as usual the light bulb went off.

It’s been a long time since I have used strawberries to make
a dessert, years actually. I tend to order strawberry desserts from restaurants
but never actually make them. Interestingly enough they are one of the easiest
to find in the grocery store, always stocked. Yet still, I tend to go for
blue berries and apples. So today I am proud to say no blueberries were harmed
in the making of this dessert.

In Jamaica, all year round but especially in Easter time, a delicious
snack consumed is bun and cheese. Now
that I think about it, we Jamaicans like to slap cheese on everything, bun,
bulla, bread, crackers, even in patties. And the cheese I’m referring to is the
thick, salty, cheddar ‘tastee’ Jamaican cheese. When you think of Jamaica and
