I made some lemon pepper ribs some time last year and they were phenomenal. I decided that I need to create a full meal on a budget using chicken and a similar lemon pepper sauce. The best part; it uses one bag to marinate it all, and one sheet pan to cook it. The gag is… you think the chicken will be the star of the show, but the potatoes shoot in from second place for a photo finish. Turns out they end up being the best potatoes you ever ate.

They always say when life gives you lemons make lemonade, but the saying assumes you have sugar and water. I have been MIA for what feels like the last 20 years from blogging. Life gave me a whole bag of lemons when my husband died four days after my last post, while I was 7 months pregnant. I was fresh out of sugar and water. Thank God for friends and family, who not only gave me sugar and water but made the lemonade for me and fed it to me. Fast forward four months later, Baby is born and healthy, I’m back to cooking and finally back to blogging. I have lost my biggest fan, but I’m still here by God’s grace. Next ill start back on video posts. Normally April would have been my month for vegan and vegetarian recipes, but I’m mixing it up and just finishing off the month with maybe 5 seafood recipes. The first being a super easy and very flavorful shrimp dish.

Who wants potato salad? That’s the line my sister says in a family home video we have. She was walking around with a fork full taunting me as I set the table. It was a Sunday dinner tradition. My mother used to throw down every Sunday. She is the reason my sister is absolutely obsessed with potato salad. So while I am setting the table (by climbing on top of it) my sister would taste the potato salad. No Sunday dinner, potluck, bbq or brunch is complete without it.

When I say spicy, I don’t mean peppery I mean full of spices. I basically took every herb I had at the time and threw them at the potatoes. They turned out pretty good, crunchy,  hot and flavorful. Anyone who love potato wedges might want to give this recipe a try.

Last Saturday I made a huge pot of this, everyone was so hungry that I could barely get pics of the food. It’s a real hearty meal that will have you full the entire day.

Mashed Sweet Potatoes

If I had to rank potato cooking methods in order of deliciousness, mashed potatoes would be in my top three. A dish of mashed potatoes is one of the best side dishes and sweet mashed potatoes are even more so. And when I say sweet potatoes, I'm not referring to the Jewel or Garnet yams. In Jamaica we have very starchy red skinned fibrous sweet potato, similar to Japanese sweet potatoes (however the flesh is a pale mustard yellow not white). This savory dish is perfect for your Christmas table. This recipe was totally by accident and I'm so glad I stumbled upon it.

Sweet and sour chicken with potatoes

If there is one dish that I would have to call my specialty it would be this. Ever since I came up with the idea to use pineapple jam instead of pineapple juice in my sweet n sour sauces the dish has never been the same. This recipe came out extra special, due to the fact that the grocery store did not have any pineapple jam, but had pineapple coconut jam. I was very excited to try this new flavor combo to see how this could make a delicious lunch.

I love instagram, you get so many ideas from this lovely app full of pictures posted by absolute strangers who you pretty much have accepted into your social media family. You see, I was all set to make my garlic roasted Irish potatoes, the same potatoes I make every Christmas and most sit down dinners. Its quick, easy and yummy. Then in scrolling the feeds I see hassleback potatoes and quickly the menu changed. This greedy girl was all set to make her own version of hasslebacks (another item on my cooking bucket list yet to be crossed off) Then in scrolling the feeds (again) I see smashed potatoes, here is where the internal struggle began, I’ve seen smashed potatoes done a few times on food network, but it never really grabbed me, and the hassleback thing I have been wanting to do for so long.
